Sally's Paddock Redbank Winery Cabernet Shiraz Cabernet Franc Merlot

Sally's Paddock is typified by blackcurrant pastille/ cedar wood aromas, with underlying savoury oak and fine grippy tannins. Each element of the blend is woven together without any variety dominating the wine. The four-hectare dry-grown Sally's Paddock Vineyard, on alluvial gravels over rich friable red clay soils, was planted by Neil and Sally Robb in 1973. Viticulture relies on natural rainfall, "a beneficial climate" and cultivation. The low yielding vines are unirrigated and the fruit is handpicked. The wine is made with a laissez-faire approach. After batch vinification the wine is drained and gently pressed off in small basket presses. Maturation takes place in 60 to 70% new and seasoned French oak and American oak puncheons.
