Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Savoury aromatics- minerals, oatmeal and spice are layered with white peach and citrus floral aromas. Complex and enticing. TASTE Flavours of white stone fruit and pear combine with cashew nuts from the oak and a lovely textural mid palate to give complexity. The palate has a line lemon sherbet acid which gives focus and length to the wine.
