This Margaret River is ripe, complex and concentrated showing classic Margaret River Cabernet characters of cassis, mulberry and bay leaf. There is balanced cedar oak along with cocoa powder, damp earth and gravel dust. The palate is full and structured with fine grain tannins. There is cassis, cocoa, bay leaf, damp earth and cedar oak. The wine has a firm, long finish with enough concentration and structure to provide medium to long term ageing. Match with traditional roast lamb with rosemary. A slightly more serious style showing clean and focused characters of citrus, nettles, dried herbs and flint, with a touch of smoke adding complexity from partial barrel fermentation in one year old oak barriques. The palate has a fuller style that has great texture and freshness with dried herbs and citrus at the forefront. The wine finishes long and clean with lingering herbaceous characters and mineral acidity.

A deep crimson red which opens with the classical Margaret River nose...fresh varietal notes of bright berried fruits, briar and sea spray, followed by wafts of chocolate and mocha with subtle spiced oak aromas. A medium to full bodied palate shows cassis and Satsuma plum characteristics, leading into the sweet mid-palate depth of chocolate and mocha, finishing with defined talents. The wine is elegant and shows great length of flavour and well-structured palate line. 'Pure and fragrant, expect a nose layered with cassis, blackcurrant, leaf and dusty spice rack spices, while in your mouth it's pure, beautifully structured, fine and dry. Devil's Lair is one of Margaret River's most respected wineries. This superbly structured Chardonnay displays lingering flavours influenced by top quality French oak; a beautiful textured mouth feel and tight acidity.

An elegant, vibrant and fragrant nose with lemon, lime and pear in the foreground. Notes of peach blossom and subtle jasmine create lift and combines with cardamom pod, almond meal and roasted cashew. The palate has immense purity, with power and persistence. Lime and lemon pith define the palate, which carries through to a delicately layered middle, threaded with a fine mineral spine. Sesame seed and blanched almonds enhance complexity, finishing with a sparkling acid structure. This wine has energy in its youth, and will build texture with cellaring.

One of the best value Margaret River Chardonnays out there. Michael Kerrigan is doing an amazing job producing Chardonnays of elegance. Hay Shed Hill has delicate grapefruit and stone fruit flavours on the palate. And these flavours are matched with fine, minerally acidity with suble oak towards the finish.

Pears, stone fruit and citrus gives way to a creamy, nutty middle and fresh acidity to close.
