Starting with Tuscan juniper berries, we searched near and far for the finest botanicals to give 1829 its balance between bright citrus characters and savoury spice. At 42%, 1829 makes a truly indulgent gin and tonic as well as a classic martini.

Our signature gin is craftfully made using 16 different ingredients which combined in our secret balance of flavours produces a delightfully tasting botanical gin. The Botanicals used include; Juniper, Coriander Seeds, Star Anise, Almonds, Cloves, Cardamom, Dill Tips, Ginger, Grains of Paradise, Black Pepper, Orris Root, Cinnamon, Angelica Root, Fresh Lime, Fresh Lemon and Fresh Orange.

Packed full of Juniper, the inclusion of the Australian botanicals and the underlying character from the Shiraz wine spirit produce an intense Gin with Citrus, earthiness, Shiraz sweetness, and a hint of saltiness to produce an intense but well-rounded Gin lovers Gin. At Tempus Two we do things differently. We don’t follow tradition. We go beyond it. Unshackled from winemaking traditions, our Copper series makes any occasion a celebration, so we decided to make a gin with flavours that help create memorable moments. Beyond the traditional juniper berry and coriander, our Wild Botanical Gin is distilled with native Australian botanicals including desert lime, orange peel, salt bush and wattle seed. The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Meanwhile, the palate is luscious with well-integrated flavours of sticky date pudding and amaretto with a final note of espresso.

Introducing our Oyster Shell Gin. Developed in collaboration with society restaurant in Melbourne, this is a unique flavour expression of the Australian coastline. The Never Never team uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint to create a unique expression of the Australian coastline and built for contemporary seafood pairings. Fresh sea spray jumps from the glass, bursting with split lime-leaf and fragrant grapefruit zest. The palate expresses saline and savoury minerality of Kangaroo Island Oyster shell and dried Australian wakame. Native greens integrate with morish salted citrus, pine and coriander spice on the mid-palate. The finish is long and luxurious, lending itself to dry martinis.

However after some 15 minutes of sipping a brilliant beguiling flavour of native Raspberries dusted with Macadamias emerged bringing a fabulous contrast to the above. Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini.
