Aqua Vitae Modern Gin is as natural as it can get, and brings a flavour like no other.Translated from old Latin, aqua vitae means water of life, a term used for distilled spirits that originated in the Middle Ages. Reinvigorating the name called for reinvigorating the spirit.With a focus on local Tasmanian and Australian ingredients, some of which we harvest ourselves, Aqua Vitae challenges the heavy gins that dominate the Australian market, providing a modern, clean spirit that teases the palate with fresh, fruity, and floral notes. The imperial mandarin, eucalyptus, and lemon myrtle notes pair well with a light tonic and a slice of fresh peach or mandarin.

The striking, ageless beauty of the Illawarra Escarpment echoes in the natural, time-honoured processes required to produce Escarpment Vodka.Our recipe uses exclusively Australian grown, whole malted wheat and traditional brewing methods to create a 100% wheat beer, meticulously distilled a minimum of three times, before blending with pristine rain water harvested from the Illawarra plateau.Take time to kick back with Escarpment. Aqua Vitae: Raspberry Gin is our latest gin; a sweet yet refreshing mixture created with Tasmanian-grown raspberries. These ingredients combine to create a harmonious taste that is rich on the palate, bringing a sweet and sensuous experience with each sip. With its rich red colour, and sweet raspberry finish, this gin can be enjoyed by itself on ice, or with a splash of sparkling water.

Breakwater is the signature gin, inspired by classic London Dry Gin and our love of the coast. Enhanced traditional bright pine and herbal notes of juniper with crisp flavours of whole grapefruit while angelica and dandelion roots impart a lingering salty savouriness. The unique blend evokes the tang of sea spray at the breakwater, or catching the first ocean wave of summer - intense, exhilarating and calling you right back in again. Breakwater offers a bold flavour profile that’s smooth enough to enjoy neat. Also perfect in a dry martini or negroni.

The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Meanwhile, the palate is luscious with well-integrated flavours of sticky date pudding and amaretto with a final note of espresso.

Created to capture as purely as possible the essence of the Australian summer garden, this is the original Garden Grown Gin (formerly called Distillery Botanica Gin). The French perfumers' time-honoured technique of enfleurage is used to extract the delicate scent and flavour from the hero botanical Murraya. It along with Chamomile, Sage, Rose, Angelica, Orris Root and of course Juniper bring this floral gin alive. On the nose, there are hints of jasmine, sweet honeysuckle and orange blossom.

NED is distilled from select Australian grain and matured until it has a boldness and character that befits its name. This limited First Batch is fiercely independent and unlike anything that has come before it.
