Wynns Black Label Cabernet Sauvignon is the beacon of quality that all Australian Cabernet Sauvignon is compared to. Chateau Pontet Canet is a large Pauillac estate that can trace its origins back to 1725, when Jean-François Pontet gave his name to the estate he had acquired. The wine was not château-bottled until 1972 and in 1975 the property was sold to Guy Tesseron, who also owns Château Lafon-Rochet in St-Estephe. Today it is owned and run by Alfred and Michel Tesseron. Pontet-Canet's 78 hectares of vineyards adjoin those of Mouton Rothschild and are planted with Cabernet Sauvignon (63%), Merlot (32%) and Cabernet Franc (5%). The Tesserons have vastly improved the quality of the Pontet-Canet wines which are now full-bodied and packed with ripe, chewy, black fruits and finely integrated tannins. The wines have great ageing potential. Pontet-Canet is classified as a 5ème Cru Classé.. It was the first major Bordeaux wine producer to earn official organic certification, and its biodynamic production is a hallmark of its current operations.

Moss Wood Moss Wood Vineyard Cabernet Sauvignon, Margaret River Moss Wood is one of the Margaret River originals (planted 1969; first vintage 1973) and this iconic flagship wine Langtons Classified since 1990 has long been Western Australias leading Cabernet Sauvignon. Figures from the cellarage company Wine Ark show that it consistently rates as Australias Most Collected Cabernet. Moss Wood Cabernet Sauvignon is intensely perfumed and finely structured with cassis-blackcurrant aromas, hints of cedar and touches of violet. The oak and fruit are neatly balanced. With proven ageing potential the wine develops subtle earth/demi-glace briar characters on the bouquet, and complexity and suppleness on the palate. The unirrigated and widely spaced vineyard (now 14.86-hectares) is planted on gentle north-east facing slopes with sandy loams to a gravelly red/brown loams over clay. Typically the fruit is hand-picked, de-stemmed into open tanks and hand-plunged four times a day until completion of fermentation. At the end of vinification, the wine is allowed to macerate for around 10 to 14 days prior to pressing off into barrel. The wine is matured in 30% new and seasoned French oak barriques for 24 months.

One of the original Second Growths of the Bordeaux Classification of 1855, Rauzan-Ségla's 51 hectares of mineral rich soils begin on the banks of the Gironde, on the left bank of Bordeaux. A complex mix of gravel, clay and limestone subsoil imparts a richness and complexity to the Cabernet (62%), Merlot (36%), Cabernet Franc (1%) and Petit Verdot (1%) grapes used to produce this powerfully intense and elegant wine. The estate was last sold in 1994 to the Wertheimer family of Chanel, who employed former Château Latour winemakers, David Orr and John Kolasa. Nicolas Audebert, the former winemaker at Cheval des Andes, the LVMH property in Mendoza Argentina, was hired to succeed John Kolasa following his retirement in 2014.

A luxurious combination of soft ripe autumn berries with fresh cool country cherries, this wine exemplifies the harmony that can be achieved by blending these two noble grapes together. The wine has an unctuous elegance that caresses the palate with a structure that is exceeded only in its width by its length. Still a youthful creature, this wine will age gracefully for decades to come. A blend of Cabernet Sauvignon (57%) and Shiraz (43%). Sourced from 1971 (100%) planted on the Estate. All batches were fermented separately and blended prior to bottling. These batches of Cabernet and Shiraz represent the pinnacle wines from the Estate, our vision is to produce a seamless integration of the best of both varieties, with great aging potential. The winemaking follow suit from the previous wines, this wine is about the best blocks of the vintage and best barrels being carefully blended. Rack and returned three times during the maturation of 15 months 100% new oak, Shiraz Burgundy coopered French oak, Cabernet Bordeaux coopered French oak Alan Hickinbotham established the vineyard bearing his name in 1971 when he planted dry- grown cabernet sauvignon and shiraz in contoured rows on the sloping site. He was a very successful builder, this his first venture into wine, but his father, Alan Robb Hickinbotham, had a long and distinguished career, co-founding the oenology diploma at Roseworthy in 36. In 2012 Clarendon, and the stately sandstone house on the property, was purchased by Jackson Family Wines; it is run as a separate business from Yangarra Estate Vineyard, with different winemaking teams and wines. The Hickinbotham Clarendon Vineyard covers a steep cut of country from the ridgetops above the village of Clarendon to the Onkaparinga River in the gorge below. Since its establishment in 1971, the Hickinbotham vineyard has become a part of Australias wine heritage, supplying fruit to produce many of Australias greatest wines. The Clarendon Vineyard has sold select parcels to Penfolds for Grange and to Hardys for their equivalent white flagship, the Eileen Hardy Chardonnay.
