The 1908 block at the HVD Vineyard was hand-picked and basket pressed, with the juice cold settled for four days before fermentation began in stainless steel tanks. The fermenting juice was then transferred to French oak barriques, 30% of which were new. The wine is balanced between primary chardonnay fruit flavours and secondary flavours, derived from the minimal solids ferment and extended yeast lees contact, resulting in this wine's texture and mouthfeel. The nose is lifted and aromatic with white blossom, ripe, yellow stonefruits, toasty oak characters, and a complex nuttiness, shot through by minerality. The palate is rich and textural, with layers of fruit, balanced by citrus-like acidity. Long and finely detailed on the finish. 100% Chardonnay from vineyards in the small appellation of Ladoix.The soils of the upper slopes are pebbly and reddish (iron-rich olite) with a high limestone content and quite marly. These suit great white wines. The grapes are harvested by hand and then directly pressed in a pneumatic press. Alcoholic fermentation takes place entirely in French oak barrels, of which 30% are new. The lees are stirred (bâtonnage) occasionally during ageing, which lasts 10 months. Jaffelins history is inseparable from that of the Collégiale Notre Dame de Beaune (the Notre Dame collegiate church in Beaune). Over the centuries, their cellars have housed the wines of the Collégiale and the Cardinals. The cellars changed ownership in 1816, when the Jaffelin brothers established themselves as negociants in the region. Today their wines rest in the monastic tranquility of the Chapitres cellars, just as they did eight centuries ago. Jaffelin entered a new chapter in its history in 2004, after completely renovating the vat room, and equipping it with modern winemaking equipment. They strive to bring out the Burgundy terroirs, cru by cru, wine by wine, at every stage of the winemaking process.

Moss Wood are not know for their Pinot Noir, however this is a fine a unique expression of region and variety. A fruit bomb of rich and integrated flavours of cherry, spice, charry oak and silky finesse on the finish. The flavours pop and linger in the mouth long after the wine has left it.

A fine and quite flinty modern expression of Margaret River Chardonnay. Finer and leaner it might be in some ways, but the unmistakable power and persistence of the region still triumphs. Complex mealy grapefruit and roasted nut characters on the nose, and a deep and richly intense palate power through to the finish.

Cape Mentelle's Cabernet Sauvignon under the guidance of Rob Mann has become one of Australia's most prestigious Cabernet's. Sourced from what many believe to be the true home to Cabernet in Australia, the Margaret River, Cape Mentelle produce a wine that has a plush full-flavoured palate of concentrated blackcurrants and mulberries with a minerally spine. Richly textured and vibrant the palate finishes long with fine yet firm gravelly tannins. A superb candidate for some medium to long term cellaring.

Houghton Gladstones Cabernet Sauvignon is a wonderful example of well established wineries in the Western Australian wine scene with access to some amazing vineyards sites within the Margaret River. On show here are marvelous aromas and flavours of bay leaf, black tea and some spicy mocha notes. Excitingly dense on palate with harmonious oak balance and impressive acidity. A brilliant wine.

Hunting Hill is situated on the hillside just opposite the winery and produces beautifully floral and perfumed Chardonnay with a distinctly liner and long palate.

Woodlands were one of the 'first wave' of wineries to set up in the Margaret River in the early 1970s and today that heritage is in the capable hands of Andrew and Stuart Watson, sons of the pioneering David. The Margaret Cabernet Merlot displays aromas of rosemary, leather and spice winding through blackberry and blackcurrant fruit. The palate is a reflection of the nose, and is bolstered by eucalypt, bay leaf and cranberry flavours.
