Tasmanian Dry Gin, A classic London Dry style with a Tassie twist has 11 botanicals that hero the native pepperberries and herbs found on the way to Cradle Mountain. Wildly fragrant with alpine freshness, juniper, coriander and Tasmanian highland pepperberries with a hint of liquorice root.

The first spirit in the World to be made from sheep whey and recent winner of Worlds Best Vodka (World Vodka Awards 2018) judged in London amongst the worlds leading Vodkas. Each Bottle is hand sprayed black and the label hand written and signed by Ryan Hartshorn (Head distiller) The spirit is made by fermenting the lactose sugar within the whey which is the waste from our sheep cheesery which is on the same farm where we milk our animals. Very Small 80-100 bottle batches. The spirit is unfiltered which is rare for a vodka. This means you will get a lot of character remaining from the whey which is a sweet nose and creamy mouth feel. This vodka is designed to drink straight at room temperature. Serve alone in a large aromatic glass or as a vodka martini with a pair of quality green olives.

Aged 4yrs in American Oak ex Makers Mark barrels, our Single Malt Bourbon Cask brings rum and raisin aromas with a subtle vanilla and a spiced herb oak undertone. Impression Bay Distillery is located on the beautiful Tasman Peninsula, Tasmania. Our First Impression Gin is made in the London Dry style and incorporates not only traditional botanicals including juniper, cardamom, coriander, cassia bark and lemon myrtle but also our three, fresh, locally grown aromatic botanicals, Mountain Pepper berry, Saltbush and Kunzea. These botanicals are vapour infused in the last stages of distillation in our German still, preserving their subtle aromas and flavours. First Impression Gin is smooth, well balanced and unlike some other gins, crafted to be enjoyed neat or on the rocks. 42%ABV.

Aged 4yrs in Portuguese sourced Port barrels and re-conditioned in Tasmania, Iron House pure Tasmanian Single Malt Port Cask is an enticing drop. The initial pour sits in the glass with a reddish orange embered hue and greets the nose with a stone fruit, red wine, buttery, sweetened spiced aroma. A palate of red berried wines, dried dark fruit, orange zest, hazelnut oak warmth with a touch of dark chocolate, tobacco and heat.

Hobart Whisky Signature is a marriage of small carefully selected American oak ex-bourbon casks. A satisfying light ex-bourbon cask single malt that delights with a solid malty foundation, some gentle spice and a long, complex finish. Tasting Notes: Nose Freshly baked apple pie with cinnamon, raisins, sweet crust pastry and vanilla custard. Palate Marzipan icing with hints of vanilla bean over malty and clean oak foundations. Fizzy sherbet overtones lend this classic bourbon cask dram a lovely zing and brightness. A couple of drops of water serve to sweeten the sensation and open some subtle floral tones. Finish Long and clean with a lingering semi-sweet sherbet fizz with hints of almond providing a very pleasant semi- dry conclusion.
