The house of Besserat de Bellefon was founded in 1843 near Ay in Champagne, and is now based in Epernay. The hallmark of the house is the lower than normal pressure that the wine is kept at under cork. This lower than normal pressure does not reduce the effervescence, but softens it, allowing the wine to partner better with food. Located in the heart of Reims, Champagne, Castelnau represents the very essence of the region, with access to 900 hectares of vineyards across 155 crus, creating a unique grape growers collective that guarantees exceptional supply possibilities for the production of outstanding Champagne. Known for its extensive lees ageing, Champagne Castelnau has a long established reputation for its top quality range. This is the " signature dish" of the House of Castelnau with its stand-out characteristic of long maturation. The strength of the toasty notes from the Chardonnay recedes gradually to allow the sensation of spicy overtones of thyme and bay leaf to emerge. There are hints of white tobacco and dried flowers as well. Thanks to the presence of the reserve wines in the blend you begin to find warm praline flavours and toasted, grilled notes, gingerbread, almond, hazelnut balanced by fruit notes of peach and ripe apricots. The freshness on the palate comes from the Chardonnay in the blend and this also brings elegance to the finished wine.

Complex mealy grapefruit and roasted nut characters on the nose, and a deep and richly intense palate power through to the finish.

Deep Woods Estate Reserve Chardonnay gives aromas of fresh stone fruit and citrus blossom combining with warm straw, cedar spice and chipped oyster shell. The Palate displays pure and elegant stone fruit, lime zest and jasmine. A fine acid backbone combines with lees-derived texture to produce a wine of depth, and complexity with an underlying minerality.
