Applejack Vineyard was planted by highly respected viticulturist Ray Guerin and is managed by his son Mark. This vineyard is situated in the Upper Yarra Valley to the south east of the traditional valley floor. The higher altitudes result in cooler growing conditions, despite the westerly aspect. The distinctive dark-red volcanic loam soil is a distinguishing feature of the vineyard. Applejack Vineyard is located on a dramatic slope and is close planted and meticulously managed. From the Yarra Valley comes this benchmark Pinot from one of the country's best regions for the variety. Sweet berry fruit and forest floor characters are balanced by depth and length of flavour.

The fruit for this Onannon Mornington Pinot Gris was handpicked and pressed immediately into the tank. It is then settled overnight and racked to both tank and old barrels. A cool fermentation took place over two months during which the wine was stirred regularly to increase texture. Resulting in wine with great aromas such as ripe pears, mixed stone fruits with hints of cooked green apple in the background. It then leads to a full flavoured, textured palate with a delightful finish.

This Katherines Paddock Chardonnay combines the richness, drive and classicism of one clone with the fine-boned flinty structure and chalky notes of the other. It is stylish with the modern expression of Australian style Chardonnay: tense, taut and sulphidic. It reclaims the middle ground where body, flavour and palate weight co-exist with structure, texture and restrained acidity. This single-vineyard Chardonnay has well integrated natural acidity with rich varietal expression.

Utterly delicious. Classic Strathbogie Riesling with a floral texture and a moorish finish. From a high elevation unirrigated vineyard, the vines are unrushed and once again delivered fruit of pure dimensions, stunning granite soil influence on the back palate.

The Triolet blend, first produced at this vineyard in 1987, was inspired by the white wines of Graves, Bordeaux. Each variety is picked at optimum ripeness, and is usually fermented separately. The characteristics of optimum ripeness are different for each variety. We pick the Sauvignon blanc after the strong herbaceous flavours have disappeared, the Semillon when the acid is not too harsh, and the Muscadelle when the flavour intensity peaks.

Founded by James Halliday, Yarra Valley's Coldstream Hills winery has a reputation for producing quality wine. The Pinot Gris displays gentle white flower perfume, almonds and white fleshed fruit. The palate is subtle, but plenty enough flavour, glossy lightly powdery texture, some crunch of green pear on a long finish. Beautifully turned out.
