Domaine A Cabernet Sauvignon, which also includes a small percentage of Merlot, Cabernet Franc and Petit Verdot is a foil to the more opulent mainland styles. Geoff Merrill Parham Cabernet Sauvignon is a deep red coloured wine with purple hints. It was aged in brand new American oak hogsheads for 27 months. Its complex and powerful bouquet exudes aromas of roast beetroot, dark chocolate, black olive, blueberry, licorice and mint. The focussed yet balanced oak creates depth as it opens up in the glass. The palate is fleshy, full of tannins, structured with tight acidity, and displays flavours of dark blue fruits, black cherry and olive. Enjoy it with runny double brie, white castello, or pork belly.

Compelling and convincing, with florals, currants and blackberries, not too sweet; it has a savoury edge, with the oak seamlessly integrated. Perfectly ripe tannins with poise and presence ensure that this is lovely now, but will be more so in years to come.

Once in the mouth, this rich and full-bodied wine releases notes of coffee, olives and licorice which are emphasized by an opulent and harmonious length. A fine wine which marries fullness and delicacy, while avoiding heaviness and excessive oak.

Subtle threads of violets, cherry blossom and fresh juniper berries serve as highlights to an ample tapestry of black plums, cacao nib and ironstone. Sheer textures of crushed granite and black cherry skin are laced with porcelain tannin and quenching natural acidity.
