Penfolds Bin 407 Cabernet Sauvignon has always been a fine mark for great quality Australian Cabernet at a price that is still within reach. When you match that with Dan Murphy's ability to cellar this magnificent wine in our climate controlled cellars you have an opportunity to good to miss. While the 2007 was a difficult year for most in South Australia, Penfolds are in the lucky position of being able to select from a wide array of regions and vineyards to find the best Cabernet expression possible. A more medium weighted 407 than usual, this vintage show finesse and grace that will reward for a decade or more to come.

Blackcurrants, cherries, dried cranberries and Satsuma plums feature on the nose at the forefront. Bay leaf, cinnamon, cardamon, cedar and clove combine with heightened lavender notes and hints of fresh tobacco. The palate is fine with a mineral thread. It is elegant and delicately layered. Blackcurrant and cherries feature again with a subtle cassis edge. The mid palate has supple flesh with cocoa, coffee bean and cassia leading to a graphite line and powdery tannins.

Deep ruby in colour and an alluring perfumed nose has an abundance of blue fruits, sweet blackberry and soft florals, with underlying leathery, briar notes. The palate demonstrates a great energy and richness, however it remains elegant with fine graphite tannins. Juicy black pastilles, plus warm cassis and wild blueberries with an edge of bay leaf. As Australian Chardonnay continues its re-emergence, Vasse Felix Heytesbury is firmly leading the charge with its complex, modern style that has seen the winemaking team take home a cabinet full of trophies and gold medals in recent years. 100% wild yeast fermented and matured in French oak for only nine months, there is a power and persistence that is unmistakable. A flavour cavalcade of matchstick, citrus, white peach and grapefruit alongside a subtle toasty, nutty aspect from the sublime oak regime.
