From one of Australia's most celebrated fortified producers, this is a great example of the style. Some burnt citrus and caramel flavours make it a lovely way to end the evening.

Bright plum in colour, Penfolds Bin 169 Cabernet Sauvignon displays delicate notes of mint and blackcurrant, with a more savory bouquet of semi-dried tomatoes and fruit chutney at the end. A hint of oak and spice adds extra warmth. On the palate a flavour-wheel of spearmint, milo powder, chocolate and black liquorice.

Felton Road is responsible for putting Central Otago on the world Pinot Noir map. Producing some of the new world's greatest Pinot's, the winery's Block 5 is no exception to the richly textured, polished style. Full of fine dark tannin and subtle hints of spice, the fruit somewhat takes a back sit into the darkness. A few years in the cellar will no doubt open this beautiful wine up.

Houghton Cabernet Sauvignon from the Stripe series of wines has loads of cassis and dark plum flavours that are perfectly balanced with hints of cigar box, soft tannins and a touch of oak. A true WA Cabernet for a fantastic price!

Dark garnet in colour with pronounced dark fruits, mint and oak on the nose. Another classic from the winery that showcase the regions true character. Full bodied mouth-fill with similar quality from the nose, a hint of metallic aftertaste on the palate. Gracefully lengthy finish.

With a name that directly translates from French as 'The Soil', the Le Sol Syrah (Shiraz) pays homage to the terroir that creates this rich and evocative wine. With the trademark Gimblett Gravels stony soil, with exhibits amazing refinement and breeding while not relinquishing body and complexity.

Often referred to as 'Baby Grange' or 'Poor Man's Grange', Bin 389 was the wine that helped to build Penfolds' solid reputation with wine drinkers around the world. Coming from one of the best vintages in recent Barossa history, the Old Block from St Hallett shows what careful vineyard management can do for a wine. Rich, dark and conerntrated but with seamless tannin intergration.

Wendouree Shiraz Mataro is deep in colour, has blackberry and liquorice core and hugely famous tannins. The wines from Wendouree are honourable wines - highlighting the connectivity of winemaker, traditional wine-making practices, regional characteristics and vineyard personality.

The Glaetzer family have been part of the Barossa winemaking scene since 1888 and now Ben takes over the reigns and produces Shiraz of the utmost intensity and concentration. Named after the ancient Egyptian god Amon-Ra who was the champion of the poor and troubled and was central to personal piety, the temple of Amon-Ra is believed to be the first to plant a vineyard to produce wine for the citizens of the temple. This incarnation is rich, full-bodied and viscous to the palate, yet with sublime oak integration and a balance on the back palate that is quite lifted allowing it to be paired with many meals and a prime candidate for medium to long term cellaring.

Australia's oldest family owned winery, Yalumba produce a quintessential Barossa Shiraz here with the Octavius. Refined and elegant, its full of incredible fruit complexity that never looks over-ripe or jammy. A true Australian classic.
