Bannockburn is spicy with well intergraded savoury oak and great acidity backbone. From vines yielding less than 1 tonne/acre, 100% whole bunch, natural yeast ferment, 100% new oak. A powerful and structural Pinot Noir by Lethbridge. An unusual presentation of the MV6 clone in the Estate vineyard produces fruit of great density of flavour, and very low yield (0.5 tonnes/acre). This wine was fermented with 100% whole bunch inclusion and had pre-fermentation maceration for 7-10 days. Wild yeast fermentation in small open vats proceeded with daily pigéage. Pressing was straight to barrel (100% new French oak) to allow for gross lees contact and natural MLF.

Woodlands were one of the 'first wave' of wineries to set up in the Margaret River in the early 1970s and today that heritage is in the capable hands of Andrew and Stuart Watson, sons of the pioneering David. The Margaret Cabernet Merlot displays aromas of rosemary, leather and spice winding through blackberry and blackcurrant fruit. The palate is a reflection of the nose, and is bolstered by eucalypt, bay leaf and cranberry flavours.

The Triolet blend, first produced at this vineyard in 1987, was inspired by the white wines of Graves, Bordeaux. Each variety is picked at optimum ripeness, and is usually fermented separately. The characteristics of optimum ripeness are different for each variety. We pick the Sauvignon blanc after the strong herbaceous flavours have disappeared, the Semillon when the acid is not too harsh, and the Muscadelle when the flavour intensity peaks.

Labegorce is found just north of the town of Margaux, opposite Chateau Lascombes. It produces wines that are often favourably compared to its neighbouring classified Margaux Growths, but available for considerably less of an investment. Its instantly recognisable and iconic chateau was constructed in 1821, and the modern estate was purchased by Hubert Perrodo in 1989, now managed by his daughter Nathalie. The wine is typically made up of at least 50% Cabernet Sauvignon, followed by slightly less Merlot and a small balance of Cabernet Franc and Petit Verdot. Soils here are primarily sandy gravel with small amounts of limestone.

The largest estate in St Emillion, Laroque has been in the Beaumartin family since 1935, but has been completely revitalised and garnered a cult following in the last decade. The vineyards were originally put down in the 18th Century, with the current vines planted in the 1960s. David Suire has taken in the mantle of winemaker with aplomb - his most recent releases being consistently excellent. The property also produces fruit for wines sold as Chateau Peymouton and the estates second wine Les Tours de Laroque.

La Dominique is a Grand Cru Classe growth of Saint-Émillion, leading the way in many fields of modernisation and innovation amongst the chateaux of Bordeaux. Owner Clement Fayat has spent decades on improving everything from vinification facilities, to drainage, to the cellars, to a bright red (and controversially visible from a distance) vat house completed in 2013. Benefitting (similarly to their famous neighbours, Ch. Cheval Blanc) from a proximity to Pomerol, La Dominique produces Merlot-led wines that combine vigour and elegance.
