The cask formula focuses on ex-bourbon and ex-sherry casks. A pleasant character, with green apple, tropical fruit, vanilla and toffee. A medium-long finish with chocolate and light oak.

Tarsier Khao San Gin

Distilled with the classic Thai flavours of birds eye chilli, lemongrass and kaffir lime leaf. On the palate its savoury with earthy notes of red pepper, undertones of lemony citrus and aromatic hints of kaffir lime leaf. The chilli flavour packs a punch without the heat. Fords London Dry Gin

Distilled in London at Thames Distillers, Fords Gin is a collaboration between 10th generation master distiller Charles Maxwell and gin expert Simon Ford. A modern take on a classic London Dry Gin, Fords Gin starts with a traditional base of juniper & coriander seed balanced by citrus, florals and spices that are steeped for 15 hours before being distilled. Each botanical blends together to create the perfect base for any gin-inspired cocktail. A mix of 9 botanicals including Juniper, Coriander, Lemon Peel, Bitter Orange Peel, Grapefruit Peel, Angelica, Cassia, Jasmine and Orris. is a very bright and aromatic gin with a light sweetness on tip of the tongue. A gentle introduction of the botanicals follows with notes of angelica root and citrus oils balancing on the palate beautifully. The finish lingers with fresh zesty grapefruit and juniper.

The Irishman Harvest Irish Whiskey

The full-bodied flavour of our signature whiskey comes from the unique marriage of single pot still spice and single malt smoothness. A triple distilled Irish whiskey which is complex yet smooth, this is ideal on its own or on the rocks, though a grilled rib eye steak with a side of mash and gravy, would suit it perfectly. Nose: Nectarine, honeydew melon, buttered brown bread. Palate: Custard cream biscuits dunked in tea, cinnamon sticks, peppercorn, and lemon cheesecake. Finish: More biscuit notes, with a touch of anise.
