While the Pays dAuge Calvados requires prolonged aging in oak barrels to flourish, a Calvados produced from apples and pears, and distilled in a column still, offers an aromatic universe dominated by fruit, palatable. from an early age. For this reason, Christian Drouin preferred to offer for entry-level a Calvados partly produced in the establishment he operates in Domfront. This calvados derives its originality from the high percentage of perry pears used in conjunction with cider apples. The soil (schist and granite) and the distillation process (a single distillation) also contribute to its typicality. Blended with the finest scotch whiskies, using a base spirit of 3-year-old blended scotch mixed using fruits and spices. A citrus aroma with the sweet spice of cinnamon, raisin, orange and cocoa – backed by the distinctive cereal character of aged whisky. Baked apple, orange, traditional whisky notes, and raisin hit the taste buds before finishing with a hint of vanilla and dried raisin.
Citadelle Jardin D'ete (Summer Garden)
It is summer in a bottle. This artisanal dry gin is inspired by the fruits and flowers of the garden of Château de Bonbonnet in France. Imagine it as a sensory postcard of the place, bearing accents of the garden fruit: whole lemon, Charentais melon flesh, yuzu and orange peel. And to round it off, juniper berries cultivated by hand from the orchard out front. The gin is a blend of 22 botanicals, which are distilled at low temperature to intensify the freshness of the fruit. Each botanical is infused for a different length of time, and then distilled in small copper pot stills. Drink it neat, on the rocks, with sparkling water, or make a cocktail with tonic, lemon zest and a lemon peel twist.

Audemus Umami Gin
Umami Gin is a creation for the Australian Market from French Distillery, Audemus. Bottled at 42%, the purpose of Umami Gin is to offer the best base spirit for a complex martini. Umami Spirits has been part of Audemus portfolio for a long time. Umami Gin has been created after a long trip around Australia with Miko (Owner of Audemus Distillery). The point was to add a distillate of juniper distilled a low pressure (rotovap) to the initial recipe. An intriguing Gin designed for cocktail enthusiasts. Named after the fifth "basic taste", which is described as savoury. Umami Gin is produced with a caper distillate made from Sicilian capers, Parmesan and 2 other savoury ingredients, combined with a neutral grain spirit. Quite niche but very cool!
Audemus Sepia Amer
Sepia Amer is a contemporary aperitif made in Cognac. An homage to the French-style bitters of bygone years. With a base of roasted French chicory, which provides a full-bodied and lightly bitter canvas, Sardinian myrtle (tannic and spicy), fresh seasonal oranges (smooth and aromatic), angelica root (earthy and bright) as well as a handfulof other botanicals are painted together to create an intricately modern, bitter-sweet spirit. The result is a tension between the earthy – roasted flavours of chicory and myrtle and the ethereal brightness of orange. Sip Sepia over ice, in a light beer as is the tradition method in France, or in cocktails.
