A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

Titos Handmade Vodka is produced in Austin at Texas first and oldest legal distillery. It is micro distilled in an old-fashioned pot still, just like fine single malt scotches and high-end French cognacs and distilled six times. Titos Handmade Vodka is designed to be savoured by spirit connoisseurs and everyday drinkers alike. This time-honoured method of distillation requires more skill and effort than modern column stills, but its well worth it.

Capricorn Spiced is a finely crafted, small batch distillation of Central Queensland molasses. Weve left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Mixed with a traditional bill of spices that has an Australian twist to it, it drinks superbly straight up, with Ginger Beer and Lime, or in a cocktail. Capricorn Spiced has no added chemicals and is made from all natural ingredients.

Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Ageing in Oak Barrels for a minimum of two years we have a refined and elegant rum that is then paired with caramel and sea salt to produce the nectar of the gods, Capricorn Salted Caramel Rum Liqueur. Capricorn Salted Caramel Rum Liqueur is slightly sweet, however there is a focus on highlighting our aged rum. Its delicious and can be served many different ways.
