Bluecoat exclusively utilizes 100% organic juniper berries, which transmit spicy, earthy notes as opposed to the pungent pine-tree flavours of regular berries. A premium blend of organic American citrus peels and spices complements the rich juniper notes, giving Bluecoat its classic citrusy finish. Creates the perfect All-American G&T or a Liberty Martini and is always garnished with an orange.

After maturing for years in South Australian red wine casks, our Muscat Finish Whisky spends additional time in richly flavoured South Australian fortified wine casks. These European oak casks held muscat for at least 20 years, and impart bold flavours of dried fruit and fine tannin.

The first paddock to pour truffle gin made with fresh black truffles grown on our family farm in Australias picturesque Southern Highlands. Starting with our fresh truffle as the hero, we infuse unique Australian botanicals such as Kangaroo Island Honey and Tasmanian Mountain Pepper, plus a few other secret spices, to achieve an out-of-this world aromatic experience.
Prohibition Negroni
Lovers of the traditional Italian classic cocktail the Negroni will find a new love in the form of this All Australian Negroni featuring our 69% Bathtub Cut Gin. Replacing the traditional Campari with Applewood Red Okar and featuring Maidenii Sweet Vermouth, this rich, earthy Australian take on the classic is a joy to behold. With less acidity than traditionally associated with a Negroni and despite its high alcohol content, it is easy drinking, soft, well rounded and richly botanical driven, with 50 individual botanicals between its 3 spirit ingredients. Serve on ice with a twist of orange peel, it will convert anyone to a Negroni lover!

Once again, it features all the luxurious complexity you’ve come to expect, including classic ‘Christmas pudding’ flavours from ingredients naturally macerated in our citrus-forward Australian dry gin. This season’s Adelaide Hills figs deliver more flavour than ever before, providing extra depth and complexity to support a backbone of dry gin, macerated cherries, and vanilla. Cinnamon, nutmeg, cloves, ginger, and a touch of star anise harmonise to create a rich spice hit. As always, it plays perfectly in your favourite Christmas cocktails, like a French 75 – on ice with a glacé cherry, or over Christmas pudding, custard, or ice-cream for a decadently festive dessert. Nestled amongst coastal rainforest in the Byron Bay hinterland, our terroir is uniquely influenced by the powerful Pacific Ocean. 'The Original' is matured in American oak ex-bourbon casks and is a whisky true of its natural environment. The colour of a Byron Bay sunset. The palate offers soft vanilla, crème brulée and biscotti characters, layered over distinct notes of pear, coconut and buttery macadamia.
