France's Bordeaux, is the spiritual home of the Cabernet family of grapes, which extends beyond Sauvignon and Franc to Merlot, Malbec and Petit Verdot. If you love Margaret River Cabernet blends, or indeed the Merlot dominant reds of Hawkes Bay, NZ, then you must look at the wines upon which many of them have been modelled. This wine is Cabernet and Merlot, deep and rich, cassis and earthy cedar, structure and uncommon length - all hallmarks of Grand Cru Bordeaux.

Billecart-Salmon Cuvée Elisabeth Salmon Brut Rosé, Champagne The name Billecart-Salmon comes from the joining of two families by the marriage of Nicolas François Billecart and Elisabeth Salmon. The vintage Rosé Champagne, first created in 1988, is named in honour of co-founder Elisabeth Salmon. Château Mouton-Rothschilds dry Bordeaux white is made from a blend of Sauvignon Blanc, Semillon and Muscadelle, all planted within 4.5 hectares of vines. It is one of the few Bordeaux whites that is subject to malolactic fermentation. Ripe, intense, and elegant, stone fruit and citrus dominate the palate of this wine, with a line of racy acidity to add freshness.

Dom Pérignon is the most famous Champagne in the world, and for good reason. The bouquet sparkles with delicate fresh violets in a setting of white peaches. The soft delicate flavours continue while the senses are tickled by the most delicate of fine bubbles. Though this is such a fine delicate wine, the complexity is astounding, along with its length. Stunning.

This 25-hectare Premier Grand Cru Classe estate, perched on the highest plateau of St Émilion, is one of the jewels of the right bank. Made with the assistance of Michel Rolland, this opulent and generously proportioned Bordeaux, with dark plum praline flavours and chocolatey tannins, is one of the top wines of this vintage.

While the estate known as Chateau Haut-Bailly dates back to 1461, its wine production began in 1530, falling into the hands of the de Leuvarde and Le Bailly families in 1630. It was purchased in 1998 by Robert G Wilmers, a Harvard-educated banker, and his French wife Elisabeth and under their care, the estate has begun producing some of the best wines in its history. The cellars and production procedures were renovated and modernised and this year, the Chateau itself was awarded government recognition of its cultural and vinious heritage.
