Made only in the best years, this wine is concentrated and intense. Powerful yet elegant, it has fine and silky tannins and a long finish. This wine is delicious now and will age beautifully for the next 10 years.

The Yarra Yering Pinot Noir is produced from what are amongst the oldest Pinot Noir vines in the Yarra Valley. Always aristocratic, fragrant with intense aromas of sweet strawberry and ripe plums, the Yarra Yering Pinot rounds out with mouthfilling notes of the same with a length hard to ignore.

Applejack Vineyard was planted by highly respected viticulturist Ray Guerin and is managed by his son Mark. This vineyard is situated in the Upper Yarra Valley to the south east of the traditional valley floor. The higher altitudes result in cooler growing conditions, despite the westerly aspect. The distinctive dark-red volcanic loam soil is a distinguishing feature of the vineyard. Applejack Vineyard is located on a dramatic slope and is close planted and meticulously managed. After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Rosso Gin is the perfect union of fermented Barbera grapes from the Yarra Valley, combined with our Crossover Gin and infused with Australian native Davidson plum. The result is a lively deep red coloured Gin. With notes of fresh picked berries and soft piney juniper, warm earthy spice and savoury herbaceous notes. Soft tannic astrigency and slightly tart finish, a delight for the senses.

Our Crossover Gin is where the Italian garden meets Australian bushland with the perfect union of traditional Italian and Australian native botanicals. A juniper forward gin with hints of thyme, rosemary,olive leaf, native basil, macadamia nuts and lemon myrtle.

Red Leg is an authentic spiced rum from the Caribbean that is named after the Red Leg Hermit Crab which is native to the coral reefs of the area. From the stable of Ed Carr, arguably Australia's finest sparkling wine maker comes the Yarra Burn range of wines including this non vintage Yarra Burn Premium Cuvée Brut. The wine shows lifted citrus and stone fruit aromas with nuances of toast and mushroom. The palate shows great structure, elegance and persistence of flavour.

Bright pale yellow, there is nothing Innocent about this Pinot Gris! An extremely well made wine with distinct pear and freshly cut green apple slice on the nose followed by similar varietal characters on the palate. It is satisfyingly crisp with great acidity structure to be one of the great summer enjoyment.
