'Devil's Lair winery was considered a boutique winery until not that long ago. In recent years it has evolved to become one of the heavy weights of the Margaret River region. The winery's quirky name derives from an archaeological dig site on the property that unearthed an ancient Tasmanian Devil fossil. Elegant and fragrant, this wine is all about vibrancy and fruit purity. Blackcurrant and herbal notes, bay leaf, violet florals and red-fruited freshness. It's layered and complex with a lovely mineral note running through, and oh-so-pure. Delightful drinking. Dry grown from our single vineyard organic plot in Yallingup. Hand harvest, foot & hand stomped into the terracotta pots. Hand plunged daily during wild fermentation then left on skins for six months with native malo. Basket pressed on a cold wintery day back to the amphora for maturation for three months. Hand bottled direct from the pots, sealed under cork with a wax top. No fining, no adds, no filtration, no pumping, no gas, only good old candle power & knuckle grease. Plus very minimal sulphur at the bottling process - this is to ensure no bottle variation & to eliminate any oxygen pick up.

Our philosophy has always been to give our wines time to develop in the bottle before release, a rarity in today’s market. Enjoying wines when they are ready to drink, rather than straight after bottling, when the wine has had time to develop and balance up in the bottle with no screaming parts. This cane cut is produced from Sauvignon Blanc vines planted in 1987. Hand harvested on the 17th of April at 23 baume. Fruit cold crushed to press and cold settled before a 12 o C ferment in barrel. Aged on light lees for four months before bottling.

Medium crimson red with a slight purple edge. A generous combination of lifted forest berry fruits, cassis, and dark cherry fragrances upfront with underlying black olive and blackcurrant nuances. Subtle sweet cinnamon oak spice, violets and savoury dried herbs adds a further depth of complexity. Medium to full bodied wine with elegant, well integrated red berry fruit flavours fill the palate followed by a succulent, fleshy but firm tannin structure. Juicy red berry fruit flavours persist endlessly with a hint of dark chocolate mocha on the finish.

Vibrant, deep purple/black with a dense purple rim. A potently perfumed, layered wine that showcases the essence and class of Margaret River Cabernet Sauvignon. Cassis, black olive and dried herb with tobacco leaf, redcurrant and floral notes. An underlying nuance of cedar and lightly roasted spices from maturation in well-seasoned French oak hogsheads (300L). The palate is seamless and fine with tremendous length and intensity of flavour. It has a lovely savoury tannin grip that Margaret River Cabernet Sauvignon is renowned for.

Cullen, world famous for their Diana Madeline Cabernet Merlot, have introduced another Cab Merlot, a distinguished offshoot of the Langton's classified Diana Madeline. Majority Cabernet Sauvignon blended with Merlot and touch of Petit Verdot gives the wine a luscious, bright cherry flavour with red berries playing their part. Aged in French oak, 40% of which was new, for one year. Delicious to serve with veal, lamb or beef today, but will also reward up to 10 years in the cellar.
