The structure of Cabernet Sauvignon meets the richness of Shiraz. A benchmark Penfolds wine and one of the most collected wines in Australia. The 2024 Bin 389 combines Shiraz richness with Cabernet structure. Dark plum, blackcurrant and cassis lead to a medium-full palate of dark cherry, spiced oak and firm yet supple tannins. Bush Apple Gin is a product of Monsoon Season, when the heavy rain starts, crocs lay their eggs and the barramundi are flourishing. It’s also the time the fruit of the bush apple is ready to be picked from the treetops.

Created our farm in the small village of Allworth NSW, this boutique batch of hand-crafted gin is our homage to the tradition of gin making and the native flavours of Australia. Thirteen botanicals including native sage, myrtles, pepperberry and our signature native sugar bag honey bestow their magic upon this gin. The rare sugar bag honey is produced in small quantities by Australian native stingless bees. This inscribes a unique citrus sweetness that when distilled using a traditional copper pot still delivers a softness and depth to the gin. The result is a beautifully rich gin, at home in a traditional cocktail yet with the complexity and softness to be sipped neat over ice.

Hand picked low yielding vines producing a wine with increased intensity of aroma, flavour, texture and length. Hand picked and fermented with indigenous yeast and matured in French oak for two years..

This early release wine is not barrel aged or blended, it is a pure, fresh, grapey example of Pedro and captures all the tanginess of the style before rancio sets in. The palate shows concentrated toffee, caramel and dried fruit notes and the finish is warm and lingering.

Distilled on the South Island of New Zealand in two copper pot stills, using 100% New Zealand malted barley.
