The winery's quirky name derives from an archaeological dig site on the property that unearthed an ancient Tasmanian Devil fossil. From the year that Devil's Lair's entry level wines earned accolades at Royal Society shows, I was expecting big things, and this wine doesn't disappoint. Cullen Cabernet Merlot
Cullen, world famous for their Diana Madeline Cabernet Merlot, have introduced another Cab Merlot, a distinguished offshoot of the Langton's classified Diana Madeline. Majority Cabernet Sauvignon blended with Merlot and touch of Petit Verdot gives the wine a luscious, bright cherry flavour with red berries playing their part. Aged in French oak, 40% of which was new, for one year. Delicious to serve with veal, lamb or beef today, but will also reward up to 10 years in the cellar.
Fraser Gallop Cabernet Merlot
Since the first release in 2002, Fraser Gallop Estate have gone from strength to strength, picking up a Jimmy Watson Medal along the way. The Cabernet Merlot is a lovely example of the blend which is so at home in Margaret River. Leafy mulberry on the nose with cassis in the background, and a soft , flavoursome palate. Delicious!
Ring Bolt Cabernet Sauvignon
A deep crimson red which opens with the classical Margaret River nose...fresh varietal notes of bright berried fruits, briar and sea spray, followed by wafts of chocolate and mocha with subtle spiced oak aromas. A medium to full bodied palate shows cassis and Satsuma plum characteristics, leading into the sweet mid-palate depth of chocolate and mocha, finishing with defined talents. The wine is elegant and shows great length of flavour and well-structured palate line. 'Pure and fragrant, expect a nose layered with cassis, blackcurrant, leaf and dusty spice rack spices, while in your mouth it's pure, beautifully structured, fine and dry. Capel Vale Margaret River Cabernet Sauvignon
This medium bodied and elegant wine is a blend of predominantly Cabernet Sauvignon enhanced with a small percentage of classic varietals. Following fermentation and extended maceration, the wine has been matured in new and old French oak barriques, producing a complex blend of Margaret River fruit characters including cassis, eucalypt, capsicum, mulberry and plum with secondary notes of chocolate and cedar. 93/100 James Halliday Wine Companion 2016.

Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over.
