Morris Sherry Barrel is a mature style single malt whisky that highlights the perfect balance of oak, malt, and sherry barrel influence. Maturated in a combination of French and American oak ex-Australian red wine casks and finished in barrels that have held our Morris of Rutherglen 10yr-Aged Amber Apera (Sherry). The Aged Amber is a full flor fino, produced predominantly from the Palomino grape. It exhibits a drier style, showing elegance and complexity from years of long-term aging in cask, making it a beautiful compliment to the whisky. The result is a well-integrated and very approachable Australian single malt which the broad whisky consumer can embrace. Bottled at 46% ABV. Colour: Tiger-eye gemstone with copper highlights. Nose: Spun toffee, baked fruit flan with peach compote and fresh sherry cask notes. Palate: It has a unique Rutherglen character of being produced from all Australian ingredients and finished in Morris of Rutherglen award winning Apera casks. Producing a well-structured whisky with subtle spice, toasted nut and clean oak characters. Finish: Delicious, candied lemon with gentle sage and marjoram herbal profile. Lark Tasmanian Single Malt Whisky is proudly unique in character and style. Entirely made by hand, Lark consistently distills some of the worlds most prized Whiskies, with no more than 100 litres at a time. Distilled in locally crafted copper-pot stills, this exceptional classic cask is the flagship product of the Lark Distillery. This Whisky is best described as a complex mix of vanilla-caramel-maple syrup with some slightly spicy, floral notes and gentle hints of fresh pepper on a flavourful lingering finish. Excellent neat or with a drop or two of filtered water.

Alinta is the first peated whisky added to the range since the distillery was taken over by David Prior in 2015. Alinta, an indigenous Australian word from several Southeast Australian language groups means fire and flames, and evokes the notes of Campfire Embers found in each sip. This expression utilises PX Sherry and ex-bourbon casks combined together with a sweet smoky peated spirit, sets Alinta apart from anything previously released by Bladnoch.

Bakery Hill is a new Australian venture into the generally exclusive world of Whisky production. We say exclusive, because few distillers outside of Scotland have yet managed to create a whisky that approximates to the quality or style of the Scottish original, or when they have, the whisky has usually relied upon the importation of key ingredients from the ‘homeland’. Bakery Hill’s Single Malts, despite their youth, are very promising initial efforts, and as the spirits spend longer in barrel, one can anticipate some very interesting results. As with classic malts, Bakery Hill uses only malted barley [ from Tasmania ], yeast and water to achieve its flavour and aroma. No caramel is added in order to enhance the appearance. Barrelling at Bakery Hill is done using select second fill American Oak Bourbon barrels. French Oak casks are also used for the production of the classic double wood style. Lark is Tasmanian whisky, proudly unique in character and style. Entirely made by hand with no more than 100 litres at a time, Lark's 58% Cask Strength expression is widely regarded as 'one of the world's best cask strength whiskies', winning numerous international medals and trophies. Surprisingly easy to drink at this strength, the whisky driven by a more rich malty alcohol, perfectly dominating the floral and crýme caramel notes to reveal layers of Tasmanian malt bursting across the palate, finishing with lengthy maple syrup sweet notes of highland peat and oily spice.

Matured in port puncheons, Limeburners Whisky is aged for up to 8 years. The resulting single malt is all spice and fruit with aromas of port and vanilla on the nose, barley, honey, raisins and caramel on the palate and finishes smooth.

Old Kempton Distillery's Small Cask Matured Single Malt Whisky is hand crafted on a magnificent heritage-listed property in Kempton, Tasmania, first gazetted to sell spirits in 1836. Weary travellers would stop at the coaching inn overnight on their ride between northern and southern Tasmania and the local innkeeper would revive them with aq good dram.
