Lots of dark red fruits dominating the middle palate, with notes of chocolate layered in the background. Brilliantly balanced with warm spice and sweet vanilla, that are influenced by the oak usage and a firm tannin structure.

Crossover Barossa Cabernet Shiraz
The grapes were crushed and de-stemmed into fermenters. The winemaker pumped the fermenters twice a day to maximise colour, tannin and flavour extraction. Yeast was added and after crushing was put into a mix of French and American oak to mature for 12 months. Leafy varietal aroma is balanced by ripe plum, licorice and subtle eucalyptus characters on the nose. Beautiful dark fruits and soft tannins dominate the palate. Maturation in French oak gives spices and cedar characters. The wine has a good acidity and structure with a long persistence on the finish.
