This bold Cabernet Sauvignon was crafted using premium fruit parcels sourced from lush vineyards in the Margaret River wine region. The grapes were picked at perfect tannin ripeness, fermented, and aged for a period of 12 to 15 months in French oak barrels. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. This is a complex, compelling wine with dark plums and ripe anise-like spice on the nose, silky tannins and understated oak nicely completing this moreish Shiraz.
