Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Shiraz & Cabernet Sauvignon is another match that delivers something greater than the sum of its parts. Blend the rich upfront flavour and a lingering aftertaste of Cabernet, with the silky softness consistency of Shiraz, add a splash of Merlot, and you have a Rouge of super delicious deliciousness. This blend has been simply foot-crushed, hand-plunged during wild ferment and basket pressed to old oak for some sleepy time. The Cabernet, Shiraz & Merlot are all from our Quindalup vineyard.

Fruit tannin and bold flavours of mulberries and wet slate. A focused core of fine textures and glazed cherries culminates in a mineral and persistent finish.

It has a lovely bouquet of dark berries and mocha with a soft fruit-driven palate of red currants and plums. The palate is soft, juicy and lingering. A number of parcels are sourced for this blend, once the grapes have reached optimal ripeness the fruit is harvested during the cool of night for delivery to the winery. The fruit is destemmed and sent to static fermenters for a long cool fermentation. Once pressed off skins the wine is pressed off to oak barrels for 9 months maturation of 9.
