Abasolo El Whisky De Mexico Corn Whisky is crafted and distilled from 100% Mexican Cacahuazintle (kaka-wha-sint-lay) corn, which has been cultivated and passed down for more than 200 generations by local farmers for its distinct and extraordinary flavour. Abasolo uncovers the deepest flavours of this ancestral corn through nixtamalization, a 4,000-year-old cooking technique never before used in whisky production, but fundamental in preparing corn as food in Mexico. While American bourbon makers use at least 51% corn and a percentage of barley, the nixtamalization process allows Abasolo to use 100% corn to make whisky. The nixtamalization process also has a direct impact on flavour, causing the spirit to open up with more floral sweetness and warmth of the grain. Made from GMO-free corn this gluten-free whisky has deep, nuanced notes of roasted corn, honey, vanilla, black tea and leather. These flavours are developed from the ancestral corn through the nixtamalization process and these flavours are unlike any other whisky.

Our distinctive Double Rye embodies a harmonious balance of bold rye spice with bright botanical notes that simultaneously showcase layers of freshness and complexity. A blend of column and pot-still whiskies aged a minimum of two years. Curated to highlight the wonderful, bold spice character that comes from high rye whiskies as well as a refreshing botanical brightness. A unique and balanced flavour profile of cinnamon, gingersnaps, juniper, mint sprigs, and fresh wildflower honey. Blended to be boldly sipped, stirred, and savoured. Double Rye stands on its own in cocktails, but is great served neat, with a little water, or on the rocks. Its spirited flavor fortifies classic cocktails like the Manhattan and Old Fashioned. Michter's US*1 American Whiskey
The Michter's "US 1" bottlings are so named to honour Michter’s heritage. The brand was established in 1753 as America’s first whiskey company. Washington and his troops drank Michter’s while they were hunkered down in Valley Forge. Unlike Bourbon or Rye, which, by definition, must be aged in new oak barrels, our US1 Unblended American Whiskey is aged in a way that utilizes whiskey-soaked barrels to achieve a rich and unique flavor profile. In late 2013, then Master Distiller Willie Pratt agreed to re- release our US1 Unblended American Whiskey after a nearly three- year absence from the market, deeming it "just right" and "the best it's ever been." Crucially, our US1 Unblended American Whiskey never contains grain neutral spirits - hence its "unblended" distinction. This Whiskey has deep butterscotch and vanilla notes, hints of caramel and dried fruit with a ripened fruit finish.
Bushmills 16 Year Old Irish Malt Whiskey
Aromas are big and robust with a touch of treacle toffee and sweet spice. This whiskey is full boded, it's dominate by praline, honey and caramelised fruits and toasted nuts. The finish is deep and is jammed with berries and dark chocolate.
Minor Case Straight Rye Whiskey
Minor Case Straight Rye is produced at Limestone Branch Distillery , and takes its name from Minor Case Beam, Master Distller Stephen Beam's Great Grandfather. An interesting rye which has enjoyed a finishing period in Sherry casks before bottling, imparting a balance of sweetness to the classically spicy spirit. Nose: Mince pie and stem ginger. Touches of dusty oak and honey'd cereal. Palate: A core of clove and soda bread, surrounded by cinnamon, cedar and blueberry muffin notes. Finish: Cacao, raspberry and cinnamon.
Yellow Spot Single Pot Still Irish Whiskey
Under the hustle and bustle of cobbled Dublin streets in the early 1900s, a rare whiskey was quietly making a name for itself. As a Single Pot Still Whiskey, these Spot Whiskeys are made using a unique combination of both malted and unmalted barley. This leads to that silky mouthfeel and the pot still spices that these whiskeys were so renowned for back in the old days. Rather than being simply a ‘finished’ whiskey, Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Only extremely limited quantities of Yellow Spot have been bottled making it a whiskey to seek out and savour as a true rarity. While Green Spot is often described as tasting like green apples, Yellow Spot is more in character with juicy red apples. Sophisticated and complex in character, the inclusion of full term matured whiskey from ex Malaga casks contributes exotic characteristics to the whiskey. Aromas on mown hay & cracked black pepper. Red bell peppers, nutmeg, clove oil & green tea. Sweet honey & peaches from the Malaga casks. On the palate is a honey sweetness with pot still spices. Flavours of fresh coffee, creamy milk chocolate & Crème Brûlée. Notes of red apples & toasted oak. Its finish is sophisticated & complex with a sweetness throughout, followed by a mix of red grape & dry barley upon exit.
