One of the benchmark wines of the Hunter Valley, Lake’s Folly Cabernet blend is an elegant perfumed style displaying violet, blackcurrant, earthy characters, fine-grained tannins and underlying savoury oak. The wine is open fermented followed by maturation in 300 gallon casks for six months followed by 12 months maturation in an equal combination of new, one and two year old French oak barriques.

Cellaring has transformed the Eileen Hardy Shiraz into a beautifully polished and expressive wine, revealing the depth behind its vibrant core. The once-juicy, plump fruit has softened into rich layers of dark berries, subtle earth and spice. The backbone of tannin and spice remains, now more refined and seamlessly integrated, lending structure without dominance. Still full of life, but now with added elegance and complexity—this wine is no longer just a classic in the making, but well on its way to greatness.

This wine has a deep, brick-red hue colour. On the palate, it is a classic Moss Wood Cabernet Sauvignon. The fruit flavours are a combination of mulberry, cassis and dark plum, with background notes of dark chocolate and tar. The structure is firm, with bright acidity and long, round tannins, that provide good concentration and texture.

The Torbreck Les Amis Grenache is aged for 18 months in new oak and is a remarkably fragrant wine that shows abundant aromas of spice, cherry and wild raspberry. Textured and plush on the palate, it evolves into layers of blackberry and red currants with firm, ripe tannins. David Powell continues to lead this formidable Barossa wine estate to truly remarkable heights.

Prélude Grands Crus Cuvée is composed of half Chardonnay and half Pinot Noir, selected exclusively from Grands Crus vineyards. Produced using only first press wines and aged for more than five years in the Taittinger cellar, the Prélude cuvée is a rare blend that offers finesse and structure, unique for its remarkable youth and great wealth of flavours.

A Champagne drinkers' Champagne. Freshness and vivacity with a delicate bead and complex fruit flavours. A perfectly integrated acidity suggests that it will age very well. Great as an aperitif, but with enough body to handle almost all food pairings.

David and Jenny Jones are making wine with tremendous depth of fruit flavour, reflecting the relatively low-yielding but very well- maintained vineyards in The Pyrenees. Their flagship Dalwhinnie Eagle Shiraz is a perfect example of this. Pristine and fresh with more of everything providing plenty of stuffing, redcurrant, blackberry and sage characters.

Noon Winery has become a cult figure in the wine world due to their opulent red wines that are known for their concentration and power. Not beholden to the trend of lower-alcohol, leaner styles, Drew and Raegan Noon produce block-buster reds that are in huge demand the world over. Their Reserve Shiraz is so highly thought of, it sits in the Outstanding category in Langton's Classification of Australian Wine. With fruit sourced from the '20 Rows' block in Langhorne Creek owned by the Borrett family, this is a Shiraz of serious weight and body. Still very young, aromas of violets, lavender and herbs are balanced with traditional fruit notes of blueberries and spice. Big and fleshy on the palate while still showing supreme complexity, this is a wine that needs some decanting before enjoying the saturating flavours that Noon can offer.

One of Victoria's true heritage wines, Yarra Yering Dry Red No.1 is primarily a blend of Cabernet Sauvignon with Merlot, Malbec and a touch of Petit Verdot. Planted on a historic Yarra Valley site by the late Dr Bailey Carrodus, this wine is full of complex aromas of plum and berry which is followed by rich fruits with an oak and cedar slant. A wine drinking well now and value for the true wine lover.
