Clase Azul is a Mexican tequila brand that has been sharing the magic of Mexican culture with the world for the past 25 years. The brand was born from a dream to showcase the beauty of Mexican traditions and land. Its iconic decanter, a unique creation made by Mexican artisans, was the starting point of this dream. The name Clase Azul, meaning blue class, was inspired by the blue agave used to make their spirits and the paint on their first Reposado decanter. Despite facing challenges such as natural disasters and financial crises, Clase Azul has stayed true to its ideals and overcome adversity. In 2007, the brand founded Tradición Mazahua, a ceramic workshop where Clase Azul artisans dedicate themselves to creating the brand's decanters as a tribute to Mexican culture. Today, Clase Azul is proud to share the magic of Mexico with more than 55 countries. The brand has transformed into Clase Azul México, but it still preserves the spirit that drives it to showcase the beauty of Mexican culture to the world. The agaves used for Clase Azul tequilas grow in Los Altos de Jalisco, a region of red-coloured earth that creates unique properties in the plant. To create their exquisite tequilas, Clase Azul follows a long transformation process that involves slow-cooking the agave piñas in masonry ovens, milling them to extract the sugars, fermenting them with patented yeast, and double-distilling them in copper stills. Clase Azul Tequila Plata is the unaged tequila that captures the notes of the agave, but the journey isn't over yet. The tequila is matured in casks made from oak or other types of wood, allowing it to develop a more complex profile. Clase Azul also honours the tradition of mezcal, which can be made from a wide range of agave species and reflects the soil and conditions that have nourished the agave. The artisanship found in Clase Azul's decanters is a reflection of Mexico's cultural diversity. Each decanter is a creative process that demands artistic drive, technical ability and knowledge passed down for generations. The tequila decanters tell stories through their decoration, while the mezcal decanters display caps decorated with precious artisanal techniques. Clase Azul Añejo Tequila is a tribute to the Mazahua indigenous culture and an expression that truly honours Mexican culture. Its intense amber colour with copper highlights and great body are the result of a magnificent 25-month journey in American whiskey casks. On the nose, Clase Azul Añejo Tequila offers a complex aroma of toffee, cinnamon, clove, roasted hazelnut, Mexican vanilla, orange marmalade, quince and toasted oak. The silky mouthfeel on the palate reveals flavors of nutmeg, clove, orange marmalade and toasted oak. This tequila pairs well with rich cuts of meats such as ribeye, picanha, duck breast or beef ribs accompanied by a robust sauce like velouté, meat gravy or mole. Semi-mature cheeses like brie and camembert accompanied with bread and red berry compote also make a great pairing. Established in 1994 Sullivans Cove is the quintessential small-batch luxury whisky. Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. The scales are very well balanced on this one. In fact, if it weren’t for the gentle pauses at the beginning of the palate and the finish, it would be too perfect, and therefore not as alluring. As Miles Davis once said, “It’s not the notes you play, it’s the notes you don’t play.” Well said. And the way the oak develops during the finish, just when you don’t want to let go, keeping the show going; it brings another season to binge on, and we love it. Product Information: Announcing GlenAllachie's next iteration of its oldest and most exclusive core range expression: The GlenAllachie 30-year-old Cask Strength Batch 3. Said to “embody Sherry-matured indulgence”, the Batch 3 Speyside is spearheaded by long-standing whisky maker Billy Walker, who recently celebrated reaching a half-century in the industry, the leading single malt producer was met with substantial global demand upon the release of previous batches of the vintage release. The GlenAllachie 30 Year Old Single Malt Scotch Whisky 700ml (Batch 3) is encased in a luxurious royal blue presentation box with suedette cushioning and gold foil detailing. Only 2,400 bottles worldwide of Batch 3 available worldwide. Expertly blended by Master Distiller Billy Walker, the distinctly elegant single malt was bottled at its natural cask strength of 48.9% ABV, without the addition of artificial colouring and unchill filtered. This rare Scotch whisky’s flavour profile boasts sophisticated waves of rich espresso, chocolate-covered hazelnuts, grated ginger and stewed plums. The third instalment marries outstanding casks that held antique Speyside single malt dating back to the early 1990s: an assemblage of Pedro Ximénez and Oloroso Sherry hogsheads, as well as several American virgin oak casks. The exceptional quality whisky was extensively monitored before being hand-selected by expert blender Walker from the distillery’s impressive stocks exceeding 50,000 casks across 16 on-site warehouses. Maker: In 1967 The GlenAllachie was the fourth distillery designed by William Delmé-Evans and built by Mackinlay McPherson (the distilling arm of Scottish and Newcastle Ltd). It was designed to be almost entirely gravity-fed to run on reduced energy. In 1968, the distillery began its first production run. Fast forward to 2017, Scotch whisky industry legend Billy Walker came together with his business partners Trisha Savage and Graham Stevenson to acquire the distillery from Chivas Brothers, bringing with them extensive industry expertise. Just nine months after taking ownership of The GlenAllachie, they launched their first core range single malts. Having previously been used to create premium blends, this marked the first-ever range of single malts to be released by the Speyside distillery. In 2021 their Master Distiller, Billy Walker, was inducted into Whisky Magazine’s prestigious Hall of Fame: a permanent tribute to individuals who have made a lasting contribution to the world of whisky. In the same year, their 10-year-old Cask Strength won the fiercely contested World’s Best Single Malt title at the World Whiskies Awards. On sustainability, GlenAllachie was awarded an SIETF grant, backed by the Scottish Government, for a significant decarbonisation project that will involve the installation of Mechanical Vapour Recompression (MVR) technology that will half energy demand. To power the MVR, we have installed 134 solar panels in a neighbouring field. As for the new look. Every cask quietly aging in the on-site warehouses and meticulously monitored by Billy Walker and his expert team throughout this process, ensuring the whisky is bottled at its optimum.
