A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Blend the rich upfront flavour and a lingering aftertaste of Cabernet, with the silky softness consistency of Shiraz, add a splash of Merlot, and you have a Rouge of super delicious deliciousness. This blend has been simply foot-crushed, hand-plunged during wild ferment and basket pressed to old oak for some sleepy time. The Cabernet, Shiraz & Merlot are all from our Quindalup vineyard.

LEEUWIN ESTATE Prelude Cabernet Sauvignon, Margaret River

Wonderful garnet red colour showing aromas of red and blackberries and cedar on the nose. Rich forest fruits and licks of vanillin oak on the palate. Hand plunged in open topped fermenters, with nine months in seasoned French oak barriques.

An elegant palate with flavours of dried plum, forest fruits and mocha, with some savoury notes. Tight, fine tannins provide length and structure, to this wine that finishes with dark chocolate notes.

The perfume is driven by a combination of violets, ripe cherries and cedar notes. A powerful palate of plums, black currants andnuances of bay leaf.
