WINEMAKING:Machine harvested fruit, crushed and destemmed. A portion of the fruit fermented in open-top fermenters, and the main portion in a larger format red fermenter. Macerated on skins for 10 days before being pressed into temperature controlled tanks to finish fermentation. Aged in 15% new oak, mostle French and some Hungarian for 18 months.

Cabernet Sauvignon grapes are sourced from several select vineyard sites located in the Wilyabrup sub region and north to Wildwood Rd in an endeavour to capture ripe fruit flavours, supple tannins and the distinctive perfume of Margaret River Cabernet Sauvignon. A deep and inviting black cherry colour with floral notes of violets and fruity, doughy aromas of just baked blackberry muffins. The palate is soft, inviting, and full of free range forest fruits, vanilla, cocoa and loads of supple, fine tannin. Such a pleasure to drink now but with ample ripe tannin structure to allow for aging up to 5 years.

The full-bodied palate is packed full of juicy fruits of the forest, cassis and mocha flavours. A generous wine, with a solid tannin structure and fleshy fruit characters which persist through to a warm, lingering finish.

A unique expression of the Margaret River, Deep Woods Hillside Cabernet Merlot exhibits aromas of cassis and dried herbs. The palate is a rich mixture of red and black berries and is medium bodied with elegant silky tannins. Great length with a touch of sweet spice and dark chocolate notes.
