Lark Sláinte Single Malt Whisky Liqueur (slon- cha; Gaelic= to your good health) was developed by the Lark Distillery after strong demand for a unique Australian Single Malt Whisky Liqueur. Sláinte is a marriage of premium mature Single Malt Whisky, with a unique distilled spirit of herbs and spices, produced in smaller copper pot stills. They are carefully combined over time, to give the right complexity of character, spiciness and sweetness; whilst maintaining the overtones of the acclaimed, small batch Single Malt Whisky Lark is now famous for.

Capricorn Spiced is a finely crafted, small batch distillation of Central Queensland molasses. We've left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Mixed with a traditional bill of spices that has an Australian twist to it, it drinks superbly straight up, with Ginger Beer and Lime, or in a cocktail. Capricorn Spiced has no added chemicals and is made from all natural ingredients.

True to its name our mouth-watering Zesty Limoncello combines a traditional family recipe passed down through generations from the Amalfi coast with some of our favourite foraged Australian botanicals to leave your mouth perfumed with a zesty sherbet finish. Only using carefully selected thick perfumed lemons grown at an orchard on the central coast, north of Sydney, we hand peel them, being most particular to avoid the bitter pith. Infusion of the peel into the smooth grain spirit cannot be rushed. After a month the citrus oils combine with the native botanical distillates of Lemon Aspen and Lemon Myrtle to give birth to a flavour-blend of bitter-sweet grapefruit and lime with a hint of honey and eucalyptus.

The dry botanicals are steeped overnight - juniper, coriander seed, anjelica root, cinnamon, lemon myrtle, Tasmanian pepperberry, cardamom and macadamia. This Limoncello has a strong taste of lemon flesh at first, with a heavy dose of lemon oil. Notes of lime zest and juniper come on strongly as a complementary note. The juice and essential oil complexities add some intrigue, suggesting lemon curd and key lime meringue pie; a hint of creamy custard comes on towards the finish.Limoncello is traditionally served chilled as an after-dinner digestive in a chilled cordial glass. Shake well before serving. It can also used to make various cocktails, pastry or ice cream.
