To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. Burly Citrus Gin is produced in hand crafted sets of bespoke stills at our artisan distillery in Burleigh Heads. Infusions of green and pink Australian finger limes, the flesh and rind of four other fresh citrus fruits and a combination of premium ingredients come together to achieve the unique flavour profile of our double distilled gin. Santisima Trinidad 7 year old Rum is tbright amber in colour with slightly sweet aromas of raisins, dried grapes and oak. On the palate there is slight but perceptible sweetness, combined with hints of vanilla and dried sweet almonds.

Made from a 100% natural maceration of Victorian pineapple with a double matured Trinidad Rum. This Plantation Stiggins Fancy Pineapple Rum has a rich and delicious bouquet on the nose. Accented by smoky notes and tropical fruit aromas such as, pineapple, citrus peel, and a touch of clove. The palate opens with a structured, pleasant sensation of ripe banana, pineapple, and spices layered in a smoky finish.

Veuve Capet is the first Vodka exclusively made from Chardonnay grapes (hand-harvested in the famous Côte des Blancs, in French Champagne vineyards). After a fivefold distillation and charcoal filtration, this vodka was assembled with perfectly pure water. Veuve Capet has a unique character, combining roundness and fruitness. Tasting notes : Eye : Perfectly crystal clear. Nose : Rich and elegant bouquet. Fresh, dominated by citrus notes, including grapefruit zest, then evolving to exotic notes of mango and guava. A 100% rye made in Brunswick, Melbourne from all-Australian grain grown in the Mallee. Following double distillation the whisky is matured in a two-storey tall bespoke solera system composed of new American oak and x Australian wine barrels.
