In the 1920s Prohibition Era, a Blind Tiger was an establishment known to illegally sell alcohol, with a focus on celebrating the exciting flavour and taste of liquor cocktails, many of which were Gin based. Blind Tiger Organic Gin is distilled in small batches and is a complex, yet elegant and aromatic gin.

Distilled from sugar cane honey, aged and matured in a complex Solera of batches of Rum aged between 6 and 23 years old in various styles of old oak barrels. This spirit has intensity, volume of flavour and an attractive, mellow flavour that makes this the ultimate Rum experience.

This natural floral infusion of butterfly pea flower petals gives Ink Dry Gin a remarkable and lustrous inky blue hue. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist.
