His Sangiovese is one of the best examples in the country, with spicy, savoury fruit hiding a vein of mouth watering acid that is a hallmark of the variety. Crisp and fresh acidity are the hallmarks of this Fighting Gully Road Rose that is made from Sangiovese grapes. It is barrel fermented and aged on lees, making this wine with a deliciously savoury dry finish.
David Hook Central Ranges Sangiovese
Sangiovese is Italy's most widely planted variety and responsible for some of its greatest wines from Chianti and Brunello di Montalcino. Wines made from this variety are elegant and forceful with alluring aromas of plums and dried underbrush with fresh cherry and earthy flavours medium tannins and bright acidity.These Sangiovese grapes were grown on Mount Canobolas in the Orange region The vines are 15 years old and the yields are low less than 2 tonnes per acre. This is achieved by meticulous hand pruning and crop thinning and removing all unripe and damaged grapes before harvest.Harvest date: 13th March 2017The fruit was warm fermented in traditional open vats which were hand plunged. The wine was aged in oak barrels for 18 months prior to blending.This wine is light brick red in colour, with bright purple hues. With aromas of fresh cherry typical of the variety, the palate delivers savoury fruit and a smooth finish.Perfect with pizza, pasta and antipasto platters.

Saracosa ()
Saracosa is inspired by the ‘Super Tuscans’ – a style first developed in the 1970s. These wines kickstarted the region’s renaissance and became some of the most exclusive and expensive in the world. Saracosa is from the Barbanera family estate, where half the vineyards are in the Vino Nobile di Montepulciano DOCG, and the remainder just beyond. In the 5-Star 2017 vintage Saracosa’s old vines delivered exceptional concentration. Dense, dark cherry and chocolatey tones make this a serious choice for pasta with pork ragù or bistecca alla fiorentina (steak with cannellini beans in tomato sauce).
Dal Zotto Col Fondo Prosecco
Col Fondo Prosecco undergoes secondary fermentation in bottle and isnt disgorged. The flavoursome leesy sediment dances on the bottom, hence col fondo, literally meaning from the bottom. This is how Italian prosecco used to be crafted before industrialisation turned it into mostly cheap fizz made in stainless steel tanks. This is complex, refreshing, lightly fizzy with plenty of acidity keeping it alive and kicking.
