This Deep Wood wine displays ripe berries and cassis aromas with distinctive cedary oak and crush mint leave. On the palate, this Cabernet Sauvignon and Merlot blend, unfolds in the complex layers of red fruit with black olive nuances further enhanced by subtle savoury oak. The fine tannins gives it a great lengthy finish. A wine, which will be enjoyable now over dinner with family and friends. Or provided with an ideal cellaring condition, this Deep Wood Cabernet blend will blossom further up to five to seven years.

It has a lovely bouquet of dark berries and mocha with a soft fruit-driven palate of red currants and plums. The palate is soft, juicy and lingering. A number of parcels are sourced for this blend, once the grapes have reached optimal ripeness the fruit is harvested during the cool of night for delivery to the winery. The fruit is destemmed and sent to static fermenters for a long cool fermentation. Once pressed off skins the wine is pressed off to oak barrels for 9 months maturation of 9. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over.
