The aim of the Bermondsey Dry Gin was to revive and honour a mid 20th century style of London Dry gin, the style and quality of which reflects gins that would have been used throughout the classic cocktail period. Defiance Spirits is a personal expression of high quality & design. The recipe was developed over 6 months experimenting with a number of foraged botanicals whilst the design & brand was co-created as an expression of the foraged uniqueness of the gin. Foraged springtime spruce tips, sweet ciciely (anise) and tangerine root are steeped and vapour infused with another 13 botanicals. Super small batch Navy Strength Gin, distilled with Defiance's signature foraged botanicals to deliver an uber smooth and moreish gin.

Distilled in London at Thames Distillers, Fords Gin is a collaboration between 10th generation master distiller Charles Maxwell and gin expert Simon Ford. A modern take on a classic London Dry Gin, Fords Gin starts with a traditional base of juniper & coriander seed balanced by citrus, florals and spices that are steeped for 15 hours before being distilled. Each botanical blends together to create the perfect base for any gin-inspired cocktail. A mix of 9 botanicals including Juniper, Coriander, Lemon Peel, Bitter Orange Peel, Grapefruit Peel, Angelica, Cassia, Jasmine and Orris. is a very bright and aromatic gin with a light sweetness on tip of the tongue. A gentle introduction of the botanicals follows with notes of angelica root and citrus oils balancing on the palate beautifully. The finish lingers with fresh zesty grapefruit and juniper.

Bulldog is a London dry Gin produced using old-time methods where neutral grain spirit is quadruple distilled utilising copper pot stills. Highly recommended

Other Gin might have been a product of re-distilling a neutral grain spirit but Williams Chase GB Gin is different. By using the same cider apples grown on the family farm in Herefordshire and infused with juniper buds and berries; the product is one of the driest single-estate Gin distilled. It has notes of wild botanicals including; cinnamon, nutmeg, ginger, almond, coriander, cardamom, cloves, liquorice and lemon to ensure a distinct and robust flavour.

Fresh Citrus is distilled with zesty botanicals including fresh grapefruit, lemon, limes, and oranges as well as rosehip and spicy fresh ginger. The result is a fresh and vibrant spirit of unique character, busting with citrus brilliance and perfect for pairing with soda or tonic water, over ice with a juicy wedge of fresh pink grapefruit.
