It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. Very bright and clear with a light hint of green/gold colour. Super fresh and pungent with light tropical fruit characters of passionfruit, kiwifruit and ripe pear. Quite fresh and zesty! The light tropical fruit flavours are well tempered by the tangy acidity. It has a nice weight on the palate and considerable length of flavour; the delicious crisp acidity contributing to its long clean finish. A fruity, crisp dry wine that can be enjoyed as an aperitif or serve well chilled with just about anything.

Brilliant appearance, pale straw with green hues. Fermentation in stainless steel tank allows the full expression of Chardonnay fruit aroma without the influence of oak or lees resulting in a bright, clean tropical fruit bouquet. The palate is rich with tropical fruits, clean zippy acidity balances the sweet fruit character resulting in a bright fresh flavoursome palate. When good quality Chardonnay is used unwooded Chardonnay takes on a whole new level of depth and intensity.

The classic Margaret River blend. Pale green in colour, with aromas of succulent Sauvignon Blanc and grassy Semillon. The palate is flint-dry with an initial impact of sweet racy fruit and a fine and lengthy finish.

The wine exhibits a nose with lifted aromas of passion fruit, guava and exciting tropical fruits. The palate is fine with a lovely, nervy acidity and an effortlessly long and dry finish. This single vineyard Sauvignon Blanc was fermented cool and matured over three months on lees to build complexity and palate length.
