Archie Rose Distilling Co. Smoked Heritage Rye Malt Whisky

Archie Rose Distilling Co. was founded in 2014 and located in Sydney, Australia – just a few kilometres south of the city – Archie Rose Distilling Co. is Australia’s most highly awarded distillery. With conviction, they strive to re-define Australia’s rich tradition in distilling by producing a diverse range of whiskies, gins, vodkas and rums, as well as one-off collaborations, limited releases and spirits experiences. As the fourteenth release in the Trials & Exceptions series, Archie Rose Smoked Heritage Rye Malt Whisky represents the ongoing exploration of Australia’s native eucalyptus trees and the commitment to innovation as one of the very few smoked rye whiskies in the world to ever be produced. Following the release of the Red Gum Smoked Single Malt Whisky and the Stringybark Smoked Single Malt Whisky in 2022, Smoked Heritage Rye Malt Whisky marks a new phase for Archie Rose and its whiskies, incorporating Australian native stringybark wood smoke into our award-winning Rye Malt Whisky for the first time. As the latest expression in our quest to craft quintessentially Australian whiskies, it uses both uniquely Australian grains and native timber for smoking. By choosing the deeply evocative flavour of Australian wood smoke over imported Scottish peat along with locally grown heritage rye grain grown in NSW, a regenerative crop that uses little water and helps revive depleted soil, it also supports sustainability goals. Archie Rose Smoked Heritage Rye Malt Whisky also offers a unique drinking experience with balanced sweetness, smoke and rye spice and features flavours of campfire, grilled peaches and prosciutto. We recommend serving this one as is, over ice or neat. But, if you are feeling fancy, make sure to try it in a smoky Whisky Sour or Manhattan.

Archie Rose Distilling Co. Single Paddock Rye Malt Whisky Harvest

Archie Rose Single Paddock Whisky Harvest 2018 pays tribute to the hardiness, character and charisma of a single paddock of heritage rye, dry grown in challenging 2018 drought conditions by the Whytcross family in Barellan, NSW. The first whisky in our vintage Harvest series, which heeds our ethos of working with local producers who focus on sustainability and understand the impact of their growing, harvesting and processing methods, it showcases rye that was dry grown without irrigation and then semi-fermented and malted three ways with fermentation finished using a saison yeast strain. All of which had a big impact on flavour - lending lifted aromatics of wildflowers, mandarin, yuzu and berries to the finished product, characteristics inherent to this particular paddock, year and climate. On the nose mandarin, yuzu and ANZAC biscuits greet you, with further time allowing for notes of orchard fruits, begonia blossoms and huon pine to emerge. Further time in the glass gives us roasted pecans, mulberry and carraway seeds. the palate leads with a rich and mouth-filling combination of nectarines, berries and ginger snaps balanced beautifully with roasted grains, milk chocolate and oak. The finish is a complex and lingering combination of orchard fruits, chocolate-coated ANZAC biscuits, and blossoms.

Bakery Hill Peated Malt Strength

An incorrect image is shown (not cask strength). Our Peated Single Malt, delivered straight from the cask is our “biggest” and most awarded whisky in our range. In fact it is one of the biggest Australian whiskies available today. The malted barley is “peated” in northern Scotland and exhibits a more “Highland” style peat, which produces an “earthier” rounded peat smoke with minimal “medicinal/iodine” notes. If you are looking for the ultimate flavour experience that you will continue tasting long after the glass is dry, this whisky is for you Tasting Notes: Nose: A rich subdued peat aroma combined with a natural leathery earthiness with overtones of kumquat and fruit mince tart. Sweet but not sickly. Palate: The palate reveals a tobacco leaf earthiness with layer upon layer of complex smoky peat that lingers on the lips and palette demanding just one more sip. Finish: Astonishingly long and complex, an exotic mix of experiences.

Bakery Hill Classic Malt Strength

Our Classic Single Malt, drawn straight from the cask, is the ultimate tasting experience of pure double distilled unpeated spirit. All of the nose and flavour profiles of the Classic Single Malt but ramped up to 11, without dilution, so you can enjoy the whisky as you see fit. Perhaps with a couple of drops of water before indulging. Tasting Notes: Nose: An intensely sweet satin smooth malt with overtones of vanilla, almond meal and jaffa. Palate: The palate is reminiscent of spiced orange Turkish Delight, with a fresh mouth cleansing zestiness all intermingled with malty cereal and cocoa. Rich and sweet without being cloying. A brilliant balance of sensations. Finish: The finish is deep and enveloping with lingering malt richness. Awards: GOLD 2021 Australian Distilled Spirits Awards

Starward Two-Fold Double Grain Whisky

Starward Two-Fold Double Grain Whisky is a flavourful Australian whisky matured in Australian red wine barrels. This ambitious expression marries two quintessentially Australian grains - wheat and malted barley - and elementally matures them in Melbourne's intensely reactive climate. Two-Fold promises to deliver an approachable whisky, with bright aromas of spiced vanilla, tropical fruits and cereals. The palate is rounded carrying hints of red apples and berries. The finish is delicate with soft tannins and lingering red fruits. This is a whisky for any occasion; neat by the fire, on ice to celebrate, mixed up in a perfect Manhattan. Two-Fold is made for the sharing cabinet, so enjoy with friends and family. David Vitale, founder, started off with a simple vision; create a uniquely Australian whisky to bring forth to the world with pride. Born and bred in Melbourne, David was inspired to create a spirit that reflects his home town – from its culture to it’s famed ‘four seasons in a day’ temperature swings. It is a city surrounded by some of Australia’s leading wine regions – all within a day’s drive – and is regarded as the microbrewing capital of Australia. It seems obvious now that all the ingredients for a modern Australian whisky were close by. But, in 2007, when he first started, the idea of an approachable, affordable Australian whisky - served neat or as a cocktail with food - was a big leap of faith. While Australia had a well-established small-scale ultra-premium whisky scene, David pioneered an affordable, approachable and distinctly Australian whisky. The result is STARWARD. A modern Australian whisky, elementally matured for three “Melbourne years” in Australian wine barrels, that pushes the boundaries of what whisky can be.
