Made using the modern 'small batch' distilling technique, each of the 15 botanicals are distilled separately which allows for maximum flavour extraction and ensures the very best facets of each ingredient shines. A 100% rye made in Brunswick, Melbourne from all-Australian grain grown in the Mallee. Following double distillation the whisky is matured in a two-storey tall bespoke solera system composed of new American oak and x Australian wine barrels.

Replacing the traditional Campari with Applewood Red Okar and featuring Maidenii Sweet Vermouth, this rich, earthy Australian take on the classic is a joy to behold. With less acidity than traditionally associated with a Negroni and despite its high alcohol content, it is easy drinking, soft, well rounded and richly botanical driven, with 50 individual botanicals between its 3 spirit ingredients. Serve on ice with a twist of orange peel, it will convert anyone to a Negroni lover!

A premium seasonal gin made in the style of English sloe gin, supplanting handpicked local Mulberries in the place of the traditional sloes. Local mulberries are steeped in the gin, then pressed by hand; final steps include light filtering before bottling. Naturally sweet, rich and smooth mulberry flavours distinguish this elegant gin. Served with fresh lemon juice, soda/bitter lemon and garnished with fresh berries, mint or basil.

Reminiscent of slow and salty days, Papa Salt is an easy-drinking gin made for sharing. Native Australian wattleseed and pink peppercorn are brightened with zesty wax flower, hibiscus, citrus peel and a hint of oyster shell. Have it short, tall or straight up. We'll take ours in the sun with soda water and a wedge of orange.

Robust and wonderful, Claude Navy Strength gin has a hint of the Australian bush. Our heavy hitter farm crafted gin that is full flavour (Navy Strength) with a delicate touch of Southern Sassafras foraged from the Victorian bush. This one is certainly worth adding to the drinks Trolley. Made with fresh rain water collected off the farm, juniper, orange peel, cardamom, bay leaf, orris root, cassia bark, coriander, star anise, angelica and Australian native Southern Sassafras. Serving Notes: Beautiful just neat on ice or as Gibson Martini. Or we still love it as a G&T and we use only good Australian tonics such as Strange Love No8.

After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon.
