Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.

To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. A Unique, herbed and buttered Gin produced in small 200L batches in the urban Darling Distillery. Layers of bright citrus from fragrant orange, mandarin and native myrtle melt into the warmth of Tasmanian pepperberry and the heady spice of coriander and lemongrass. Earth undertones of fresh picked rosemary and green tea are rounded by lashings of rooftop honey and the textural finish of freshly churned butter.
