It was produced from Sauvignon Blanc harvested exclusively from the familys Mangan Vineyard and on the day when the moon was opposite Saturn.

Modern white wine making techniques were used with temperature control critical from the vineyard through to the winery. The fruit was destemmed and crushed then must chilled and pressed off the skins quickly. It was allowed to settle for 72 hours before being racked in a clarified state to a fermentation tank. Each variety was kept separately with the idea to maximise it s potential prior to blending. Abundantly ripe bouquet of stone fruits, white peach and nectarines mingled with fine buttery oak undertones. Creamy powerful, complex, mouth filling with a persistant dry finish.

This wine clearly demonstrates why Margaret River is considered one of the best regions in the country for Sauvignon Blanc. A very varietal and well made wine.Pale lemon yellow. Lemongrass, passionfruit, gooseberry and pea pod. Tight and bright, zesty and juicy with a punchy mix of varietal fruit, structural balancing acidity, mouth-watering texture and a long, juicy finish. Really opens up in the glass.

This wine is a blend of 79% Sauvignon Blanc, 16% Semillon and 5% Verdelho, and is made from certified biodynamic fruit. Harvested on the fruit and flower days of the biodynamic calendar and fermented without oak, additions of yeast or acid. Some skin contact time before fermentation.
