Since the first release in 2002, Fraser Gallop Estate have gone from strength to strength, picking up a Jimmy Watson Medal along the way. The Cabernet Merlot is a lovely example of the blend which is so at home in Margaret River. Leafy mulberry on the nose with cassis in the background, and a soft , flavoursome palate. Delicious!

The bouquet shows great density, ripe concentrated blackcurrant, anise, black cardamom and lifted lavender with hints of black olives and plum aromas. The entry on the palate is soft and succulent whilst displaying a subtle texture with a black core of fruit including boysenberry, dark cherries and olive tapinade. The tannin and acid are seamlessly integrated from the front through to the long and lingering finish.

Margaret River is renowned for its premium Cabernet Sauvignons. This example emanates from this multi star rated Halliday Winery in the Yallingup Sub-Region. A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Pure Margaret River Cabernet ripe redcurrant with a touch of cassis and mulberry overlaid by leafy, violet aromas and dusty cedar notes. Richness, softness and length of flavour are features of all our Cabernets from this vintage. The wine has remarkable mid-palate fruit flavour and richness while still showing the freshness, fineness and acidity for which Margaret River Cabernet is renowned.

This is a complex, compelling wine with dark plums and ripe anise-like spice on the nose, silky tannins and understated oak nicely completing this moreish Shiraz.

Redolent in ripe cassis and dark chocolate aromas, the palate is long and structured with perfect poise and balance.

Margaret River Syrah is noteworthy because of its fragrance and attractiveness in its youth. Aromas of juicy black cherries and boysenberries with a grind of black pepper. The palate possesses a fine grained texture comprising of ripe tannin which adds to the structure and depth of the wine.White pepper, black cherries and an eastern mosaic of spices greet on the nose, brought to yield by a soft palate of fleshy tannin and coating red and black fruits.

An elegant palate with flavours of dried plum, forest fruits and mocha, with some savoury notes. Tight, fine tannins provide length and structure, to this wine that finishes with dark chocolate notes.

This is a classic Wilyabrup Cabernet – but with a twist. Rather than crafting a cabernet with massive architecture, we wanted to table a wine that dispensed with a poignant tannic structure, yet still delivered on the beauty that is Cabernet from this region.
