A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Margaret River Syrah is noteworthy because of its fragrance and attractiveness in its youth. Aromas of juicy black cherries and boysenberries with a grind of black pepper. The palate possesses a fine grained texture comprising of ripe tannin which adds to the structure and depth of the wine.White pepper, black cherries and an eastern mosaic of spices greet on the nose, brought to yield by a soft palate of fleshy tannin and coating red and black fruits.

An elegant palate with flavours of dried plum, forest fruits and mocha, with some savoury notes. Tight, fine tannins provide length and structure, to this wine that finishes with dark chocolate notes.

The Sangiovese fruit was simply destemmed, chilled and pressed using only the free-run fraction of the juice. It was then fermented at moderate temperatures using as always solely indigenous yeasts. After fermentation it was matured for three months on gross lees to add additional texture. The Nebbiolo fruit was hand-picked and, after chilling, whole bunch-pressed directly to old oak for fermentation. This took close to six weeks, after which the wine received a further four weeks maturation in barrel. At this stage the final blend between Sangiovese and Nebbiolo was decided and the wine was emptied from barrel/tank, settled, filtered, sulphured and bottled in late July.We are super stoked with the final wine!!The texture and acid structure are highlights of what is likely a more approachable and fruit-forward release of Nocturne rosé

Inky dark red/purple in colour. The nose is redolent with rich plums, dark fruits and warm spices, layered and complex. The palate is plush and generous and exhibits amazing length with detailed tannin structure. This super fine structure frames mulberry and blackberry fruits that cascade across the palate with wonderful exuberance and persistence.

Vibrant in the glass deep purple with bright red edges. The nose is complex and expressive. A mix of red, blue, purple fruits the blend of varieties reflected in the broader spectrum. Oak though present is not imposing itself. Remarkably fragrant. Savoury notes in the tobacco and cedar zone add interest. Complex structure and great length created by the blend of varieties, a wine to try now but also one to cellar.

Machine harvested at night , crushed and de-stemmed, pressed to French oak (25% new and the balance in staves) for 12 months. This is classic cooler climate Shiraz with beautiful perfumes on the nose and lovely fleshy fruit flavours on the palate, the tannins are soft and generous combining to give the wine a well structured finish.
