Keppell Smith handcrafts a Chardonnay of utmost power and concentration that produces a length of flavour that borders on the immortal.

A fine-boned Chardonnay that reflects vintage conditions and the character of a unique vineyard site purchased by Shaw + Smith in 2012. Inaugural vintage: 2014. Planted in 1999, the vineyard has east and west facing aspects and reaches 500 meters above sea level. The soil is brown loam over clay with some broken shale and stone on the ridges. The wine is100% hand-picked and whole-bunch pressed, then fermented and matured on lees in 500-litre French oak puncheons (30% new) for 9 months.

The bouquet is an enticing mix of white field flowers, grapefruit, pear essence and brioche. Enriched with layers of nougat and nut-meal, the palate's fine, creamy texture is supported by toasted vanillin oak. A bright citrus and chalky lactic acidity adds restraint and length to finish the wine. 'This latest release from the partnership of Jeff Burch and Burgundian winemaker Pasca Marchand is one of the best. Comes off a high point in the Porongurups, with the fruit being naturally fermented and then given 10 months on yeast lees to gather complexity. WinemakingAll fruit was hand-picked and whole-bunch pressed. The cuvee taille (first cut free-run juice) was settled naturally overnight prior to racking to a mix of stainless steel tank and large format old barrels for fermentation.Fermented and aged separately in small batch lots on settled lees for nine months. The blended wine then underwent secondary fermentation in the bottle. This wine has been aged for an extended period on its autolysing yeast lees for more than four years to garner richness and complexity to its innate elegance and finesse.Winemaker's notesThe protracted growing season allowed a drawn-out ripening, resulting in an uncommon richness of flavour tempered by the abundant natural acidity contributed by the season.A bouquet of nashi pear, glazed brioche, lemon cheesecake and Amaretti buscuit. Flavours of nougat, lemon rind, jasmine and chestnut underpin a palate of steely acidity with delicated bubble, fruit weight and earthy 'sur lie' characters providing textural accompaniement, richness and creaminess to the finish. An excellent match for freshly-shucked oysters or semi-hard cow's milk cheeses.

Product Information: The Bouchot Pouilly Fume MCMLV is all about roundness with citrus aromas. The mouth is complex, intense, delivering elegant power at the end. Half of the wine underwent skin contact for several days while the rest was pressed directly into old (8 to 10 years) 500L barrels. Antoine Gouffier's dedication and respect for terroir is on full display in his Sauvignon Blancs from Pouilly-Fumé. His wines display a fruity, floral, and intense minerality. As a young vigneron at the helm of Domaine du Bouchot, his wines express a vibrant, elegant, balanced tension. Antoine is truly raising the bar in this appellation. Maker: In 2019, Antoine Gouffier purchased Domaine du Bouchot, from Rachel and Pascal Kerbiquet who had been running it as a family estate since 1987. As a Loire native himself, Antoine has a profound understanding and connection to the land, which lead him to farm the land organically. In 2009 Domaine du Bouchot was the first in the Pouilly-Fumé appellation to become certified organic, and fittingly Antoine was the one to finalised the biodynamic certification. Bouchot holds 10-hectares, which is mainly planted to Sauvignon Blanc, with a few vines of Chasselas, on the southwest side of the hill from the village of Saint-Andelain. The wines reflect the unmistakable character of each of the vineyards: the Kimmeridgian marl soil is of white clay, limestone, and fossilised oysters from ancient seabeds, and the Portlandian terroir (limestone with layered, small rocks) lend a flinty, mineral quality to the wines - the differentiating characteristics lending to a unique purity and clarity. Domaine du Bouchots wines are excellent representations of a sometimes-overlooked appellation and are vibrant, elegant, and balanced. Philosophy: Antoine believes in minimal intervention in his winemaking, using indigenous yeast and stainless steel for fermentation. He is also experimenting with amphorae. The wines are vinified without sulfur. The Domaine produces three different Pouilly-Fumé: Cuvée Terres Blanches from the Kimmeridgian marl soils, Cuvée Les Caillotes from Portlandian soils, and Cuvée 1955 from the oldest vines on the estate. All fruit is handpicked, the yeasts are indigenous and the wine is made with as little pumping as possible. Aged on its fine lees in temperature-controlled stainless-steel tanks, the wine is bottled in the spring after a very light filtration. Nose - Lavender, Lemon, Quince Seems at first like a subtle expression of sauvignon, with initial aromas of lavender and light lemony citrus fruit. Palate - Tropical Fruit, Gooseberry, Silky-Texture On the palate you discover a deep-set, complex array of citrus and yellow fruit, together with a whole heap of terroir-driven nuance. Finish - Roundness, Satisfying Grip, Taut A sense of roundness and completeness with a sense of satisfying grip that clasps the palate. Long, mineral finish with some phenolic tightening.

Gary Farr is still one of Victoria's true Chardonnay maestro's and his Chardonnay By Farr is another example. Taken from the original By Farr vineyard, this is a clearly a wine of true clarity and finesse. Flavours of melon and hints of spice with wonderful oak integration mean this wine is simply delicious upon release, but handle some careful medium-term cellaring.

Giant Steps plays it's part in the rapid accension of Australian Chardonnay back to the position it once held here. That being of the king of white varieties. This is a very stylish numbe from Phil Sexton and his team. Stonefruit, melon and butterscotch characters are supported by vanillin oak and the palate is long and textured with a clean crisp finish.
