Caledonia Australis Umbra Methode Ancestral 2015 vintage is a gold in colour with light bubbles. The nose has aromas of pineapple, pepper, quince, and rockmelon. The palate has good acidity and zine with stone fruit, ripe lemon, and pineapple flavours with a crisp, bright finish. This chardonnay is produced from organic certified fruit using the methode ancestral style (petillant naturel), where the primary ferment continues its magic in bottle. An ancestral fizz comes from late ripening patch of the vineyard.

Balfour Winery 1503 Classic Cuvee Non-Vintage
Balfour Winery is based on the Hush Heath Estate in Kent, the warmest and driest country in England. The estate comprises 400 acres of vineyards, orchards, and woodlands. The vineyards were first planted in 2002 and by 2007, their first wine - the 2004 Balfour Brut Rose - had won a gold medal at the Wine Challenge. The 1503 Classic Cuvee is named after the year Hush Heath Manor was built. It is a blend of 55% Chardonnay, 34% Pinot Noir, and 11% Pinot Meunier. Pale gold in appearance, with aromas of fresh citrus, red apples, and subtle toasted brioche characters. Beautifully balanced on the palate with lemony acidity, crisp apple and subtle notes of thyme, finishing with a classic, traditional method toastiness. WINE PANEL NOTE: An attractive nose of lemon, white nectarine, white flowers, supported by subtle, savoury biscuit notes. Very creamy and rich on the palate, with sweet, pulpy citrus balanced by lemony acidity and subtle lime pith. A wonderfully balanced and approachable introduction to English sparkling wine. Gimonnet Gonet L Origine Grand Cru Blanc de Blancs
Gimonnet Gonet’s L’Origine is a Blanc de Blancs Champagne composed of fruit from five Grand Cru villages—Oiry, Chouilly, Oger, Cramant, Le-Mesnil-sur-Oger. As Gimonnet Gonet eschews the use of oak, the wine is fermented in stainless steel before it’s blended with reserve wines (30-35%), then aged in bottle for 22-36 months. Its golden colour, and mild mousse, leads to an expressive nose of bright fruit and a subtle nuttiness. The palate is grippy and fresh, yet creamy and elegant, with stone fruit, lemon zest, and a sense of minerality. 6g/l dosage.
