The EJ Shiraz is the jewel in Paxton's organic and biodynamic crown. Awarded 95 points in the Halliday Wine Companion 2017, this wine is the result of low yielding vines that are more than a century old. The flavour is elegant and round and the nose offers vanilla, black current and oak.

The best parcels of wine that make up the Coppermine Road Cabernet mostly come from a rare low-yielding clone which is characterized by its violet and anise perfume, concentration and great acidity.

This is a wine of great generosity and depth. The nose exhibits an abundance of purple fruits, mulberries and plums - with a mix of baking spices including nutmeg, cinnamon and star anise. The palate is fleshy and juicy with an almost velvet like texture. The Grenache adds fruit character and balanced acidity, the Shiraz fills out the wine and delivers early structure while the Mourvedre provides red fruits and dried herb notes and provides a core of fine tannins.

It is sweetly fragrant and instantly appealing on the nose showing dark and purple fruit aromas together with tar, game, cocoa and spicy oak nuances. The palate is rich, intense and fleshy, displaying excellent power as well as rounded mouthfeel, wonderfully complemented by velvety texture and silky tannins. Geoff Merrill Henley Shiraz shows a deep brick red colour lined by cherry red hues. A whiff of the wine reveals generous scents of berry fruits and toasty French oak. Ripe fruit flavours combine with fine and powerful tannins on the full flavoured palate, to provide an elegant structure. This delightful Shiraz ends in a captivating finale. It tastes marvellous with lamb shanks in a red wine jus, chocolate-dipped honeycomb, and sharp Cheddar cheese.

Rich and opulent displaying aromas of deep plum and black cherry with hints of complex herb and delicate oak spice. The palate is full flavoured yet elegant with dark fruits and bright red berries, framed by firm, structural tannins and moreish acidity.
