The dry citrus hit of coriander seeds is accentuated by organic white grapefruit peel, providing fresh zesty qualities of citrus with subtle hints of bitter lemon. Floral top notes of lavender, rose and orris root, with earthy undertones from angelica root presenting on the nose. The Australian native botanicals of sweet strawberry gum and hot pepper berry linger on the finish which is elongated by the nuttiness of roasted native wattle seed.

Australia first smoked gin Bushfire is a smokey, unique gin based on an original London dry gin recipe but with the original ingredients substituted for our own Australian native botanicals. Created using our base spirit which is grown, harvested & distilled at our East Coast Distillery, located in the pristine Island state of Tasmania, this artisan style Hopped Gin is a combination of the 9 botanicals which include locally sourced Tasmanian pepperberries, lemon myrtle, and the renowned Tasmanian hop. We pass alcohol vapour through a mixture of juniper and hop, creating a perfect fusion of flavours. Our classic Small Batch flavour with a delicate but rich hoppy nose and a long smooth finish.

Tasmanian Apple Liqueur is made from 100% Tasmanian apples crafted into cider and distilled through our copper still in our 1840s stable. Sweet and clean with subtle apple flavours. Tasmanian Apple Liqueur is a perfect after dinner drink served over ice or as a great cocktail base to create a OKD style mojito with soda, mint and lime.

A grape vodka, produced from the low wines grown in our East Coast IronHouse vineyards, this traditionally distilled vodka is not for the light hearted. Although exceptionally clean with a dangerously moreish hint of vanilla and caramels, this vodka when taken straight from the freezer is the perfect accompaniment to any seafood, especially caviar or oysters. Delicate, yet exceptionally clean with a crisp creamy finish. In keeping with our environmentally sound ethos, the low wines from our vines produce the clean spirit, thereby minimising wastage and confirming the source quality.

Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Either way the Embezzler should stand out in your glass.

Unique to Old Kempton Distillery Lavender Malt contains a blend of three pure ingredients Tasmanian mountain water, Tasmanian lavender and malted barley. This secret recipe is combined through our copper stills in the heart of Tasmania to create a delicious liqueur with hints of honey, spice and, of course, lavender.
