Pescador de Sueños Mezcal is a project of the Santa Sabia Distillery. They present unique collections of select mezcales in hope of rescuing the mysticism and folklore of this ancient Mexican tradition. The mythical emphasis of the brand shows in their name as well, which means "the fisherman of dreams." This maguey is the best ally to the soul Pescador de Sueños Tepeztate Mezcal is made from 25 year old Agave Marmorata from Oaxaca, these are cooked in a conical stone oven and crushed in a mule powered tahona before being fermented in Sabino wood tubs, double distilled in a copper still then aged for at least 12 months in glass barrels. Part of a four part series the Tepeztate is known as "Sense of healing".

The GlenAllachie Distillery, situated in Aberlour in Speyside, was established in 1967 and designed by William-Delme Evans, with construction carried out by Mackinlay McPherson. The distillery was meticulously designed to be almost entirely gravity-fed, reducing energy consumption. After Mackinlay McPherson became part of Invergordon in 1985, the distillery was mothballed until Campbell Distillers acquired it in 1989 and recommenced production in April of that year. In 2017, The GlenAllachie Distillers Company Limited was formed by Billy Walker, Trisha Savage and Graham Stevenson, who released their first core range of single malt whiskies in July 2018 and launched MacNair's Lum Reek in November of that year. The distillery opened its doors to visitors in May 2019 and has won numerous awards, including the Visitor Attraction of the Year for 2022. A nose of black grapes, raisins and dark chocolate orange, with hints of coffee and stewed fruits. Established in 1994 Sullivans Cove is the quintessential small-batch luxury whisky. Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Mortlach Rare By Nature 21 Year OldSingle Malt Scotch Whisky 56.9% Abv, Speyside Called The Beast of Dufftown for its robust, muscular and rich character, little known Mortlach may be the best kept secret in Scotch. Bold flavours are the mark of this special breed, distinguishing it as the monarch of its glen. 'Rich in smooth intensity, from a small batch finished in Pedro Ximenez and Oloroso-seasoned casks.' Tasting Notes APPEARANCE Deep gold with amber lights. Good beading. NOSE A mellow, rounded, nose with some prickle. The first impression is of rich, dried fruits, and beneath this fresh-baked buttered scones, perhaps spread with lime marmalade. Soon this becomes lightly savoury and meaty but retains a slight citric note. A drop of water modifies the latter and reduces the aroma. BODY Medium to full. PALATE At natural strength, mild for its strength and super-smooth in texture, while the wonderfully rich mouth-filling taste is immediately sweet overall with dried fruits, then intense and savoury with a surprising kick of chilli pepper as it goes down. Magnificently feral and delicious. Drying overall, with rich tannins. Similar with a dash of water, which raises a little more sweet, spiced fruit. FINISH Seemingly endless and deeply impressive, with the fruit and savoury notes in perfect agreement and a warming glow spreading across the palate. Finally leaving the palate dry, yet still wreathed in a glorious rich afterglow.

Talisker, one of the remotest distilleries in the world, is situated on the storm lashed Isle of Skye and has a colourful history dating back to 1830. Denounced by the local clergy, praised by none other than Robert Louis Stevenson and even suffering a still-room fire in 1960, Talisker has survived and today produces some of the smoothest and character full malts in Scotland. The 25 Year Old is sweet and mild to begin, with some acidity and saltiness. Extraordinary flavour development then envelopes the palate that becomes dry and minerally with a mild dusting of ground white pepper.

Craigellachie 23 Year Old Single Malt Scotch Whisky is a masterpiece in old fashioned whisky making. On addition to the 13 and 17-year-old expressions, this 23 Year Old has added spice, ripe fresh cooked and dried fruits with a touch of light peat smoke on the nose. The palate is filled with flavours of melted white chocolate,baked pineapple followed by spicy oak towards the finishing. It is complex, deep and well structured. An elegant Scotch Whisky that could be enjoyed neat, on the rocks or with a dash of water.
