The goal from the outset for Italicus was to create a spirit that had exceptional provenance. All the ingredients are 100% Italian, taking the best examples from different regions: Bergamot from Calabria; Cedro from Sicilia; Roman Camomile from Tuscany; Lavender, Gentian, Yellow Roses and Melissa Balm from Piemonte. Our neutral grain spirits are also Italian. Even our cap and bottle are made in Italy. And we do not add any refined sugar or syrup, instead we naturally sweeten our liqueur with a natural brown sugar (cane sugar) in order to respect the Rosolio production process as it was back in the 15th Century. Our handpicked sloe berries were foraged across Tasmania in late summer and left to rest in our heavenly gin before being bottled for you to enjoy.

Awarded Ireland's best gin, Dingle Original Gin contains botanicals from a pristine Kerry landscape, including rowan berry, fuschia, bog myrtle, hawthorn and heather. Macerated for 24hrs, the spirit is distilled in a hand beaten copper still with resulting vapors passing through a flavour basket. The distillate is then cut with pure water drawn from a well 240ft below the distillery. Each bottle is hand filled and numbered by batch. Best served over ice with tonic and a wedge of fresh orange.

Traditionally favoured by Indigenous societies for their medicinal benefits and protein content, native Green Ants are a unique bush tucker hand harvested in the Northern Territory by the Motlop family of the Larrakia people. The Green Ants display vibrant coriander and kaffir lime leaf flavours, with a citrus and lime burst on the palate further enhanced by Finger Lime. Native Juniper (Boobialla) is evident in the floral, perfumed aromatics, while spicy notes of Pepper Berry balance the citrus flavours. Strawberry Gum, Lemon Myrtle and Anise Myrtle provide green, leafy herbaceous characters which replicate traditional English Juniper resin characters.

Ink Gin gets its unique colour from the deep natural infusion of petals from an exotic blue flower. Its even more remarkable, when mixed with tonic and it turns from its lustrous blue to a remarkable blush pink. A premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.
